I have 2 recipes to use with the pesto we got…
Creamy Pesto Chicken and Bow Ties
– 3 c. uncooked bow tie pasta
– 2 tbsp butter (I didn’t use any)
– 1 lb. chicken, cut into cubes
– 1 can fat free cream of chicken soup
– 1/2 c. milk
– 1/2 c. pesto
Cook pasta. Cook chicken until browned. Add soup and milk to chicken. Heat to a boil. Cover, cook over low for 5 minutes. Stir in pasta and pesto.
We had this tonight….Next time I’m going to cut the amount of pasta in half and add fresh veggies.
Savory Seafood Penne
– 2 oz multigran pasta
– 12-14 precooked peeled shrimp
– 2 tbsp crumbled gorgonzola
– 3 c. chopped baby spinach
– 1 tomato chopped
– 2 tbsp chopped walnuts
– 3 tbsp pesto
Cook pasta. Drain, transfer to large bowl. Add shrimp, cheese, spinach, tomato, walnuts, pesto. Stir well to help wilt the spinach and distribute pesto. (I’m guessing this is served cold??!?)

Just baked your Pretzel & Ice Cream Chocolate Chip Cookies and let me just say that these are the best cookies I have had in a long time (I can’t even walk into my kitchen without grabbing one..yikes)! Who would have thought such a random combo could taste so good? Keep the recipes coming– I can’t wait to try some of the other ones you have shared! 😀
