Fun Demolition Discoveries

This morning while eating my breakfast, I couldn’t help but shake the feeling that someone had their eyes on me… 😉

IMG_7110

I put together quite a delish bowl of oats today! Before leaving the house, I put together my base:

  • 1/3 cup oats
  • 1/3 cup skim milk
  • 1/4 cup water
  • 1/2 mashed banana
  • raisins
  • cinnamon & nutmeg

IMG_7114

Once I got to school, however, I ended up stumbling across some of the leftovers from our faculty breakfast yesterday morning…SCORE!

IMG_7111

So half a piece of some sort of cinnamon apple bread was promptly crumbled on top. Best stumbling EVER. 😉

IMG_7112

Lunch was pretty much a repeat of what you guys saw on Monday, so I didn’t bother with any photos. But I did also have one of these…

Honey Graham Clif Z Bars totally rock my socks!! 😀

So last night, some serious kitchen demo was happenin’ up in this place. In the process of tearing things apart, check out the old school coupons we came across!

IMG_7102

I don’t know why, but I am always so fascinated by things like this that were from back in the day. Can you imagine clipping a coupon for 10¢ nowadays?? 😯

IMG_7103

Well, the coupons ended up being found behind this big ‘ol hunka remaining cabinets…

IMG_7101-1

Which are officially “no longer” and we are now left with no cabinets

IMG_7107

…which also means no sink.

Which is why tonight’s dinner looked like this:

IMG_7120

Yes, I finally had my first trip to Chipotle! No more Chipotle virgin here. 😉

IMG_7121

I chose the Burrito Bowl (all the burrito fix-ins, minus the tortilla) which I ordered with their cilantro-lime rice, black beans, adobo-marinated and grilled chicken, fajita vegetables, lettuce, and salsa.

IMG_7122

And as per hubby’s strong recommendations, I got us a side of chips + guacamole + mild salsa.

IMG_7125

IMG_7126IMG_7127

Now you guys probably already know that I am not a spicy kinda gal. Mild all the way, no extra heat, please! Well I’ll tell ya, I got a little nervous after the first bite into my burrito bowl…

YOWSAHS that chicken was spicy! 😯

IMG_7123

I needed something to tame down the heat, so I grabbed some plain Chobani and dolloped it on there, sour cream-style. Problem solved…deliciousness accomplished. 🙂

IMG_7128

I’m definitely now a fan of Chipotle, and lucky for me, I have a little less than half of this bowl left for lunch tomorrow! Saweeeeet. 😛

SPEAKING OF SWEET…

I have a pretty sweet GIVEAWAY coming up for you guys in the morning! Be sure to check back!!

Question for the Evening:

Have you ever discovered any interesting items from a much earlier time?

How I Beat Boredom On The Treadmill

Thanks to some tummy troubles, my appetite has been a little off today. 😳 I’m pretty sure I probably have my super-duper sugar intake as of late, plus the joys of being a lady to thank for today’s discomfort. Ahh well…life goes on!

I started things off with a little cereal combo: Quaker Oatmeal Squares + Fantastically Festive me & goji mix + skim milk.

IMG_7084

Along with my cereal & mug-o-joe, I also brought a perfectly ripe banana, which I snacked on mid-morning.

IMG_7082

By the time lunch rolled around, I really didn’t have too much of an appetite, yet I could feel my stomach grumbling…does anyone else ever get that feeling? It’s a weird one!

An always delicious pineapple flavored Chobani, topped with some Kashi Heart to Heart + granola

IMG_7086

Carrot sticks, red peppers, & grape tomatoes…all of which are on their last leg. 😯

IMG_7088

And an also-sad-looking pear which, despite it’s rather “homely” appearance, tasted quite fantastic.

By the time I got home from work, all I really wanted to do was curl up on the couch in a ball while watching TV. However, something was telling me that I should really try to get moving. I weighed the pros and cons of skipping the workout, and of course, the cons totally outweighed the pros…it was a simple case of me just being lazy. 🙄

So I threw on the workout clothes, grabbed my iPod, and hopped onto the treadmill. I wasn’t feelin’ any HIIT workouts today, so I decided to just go for a steady, 3-mile run.

Now, steady for me is never one set speed. No matter what, I just cannot run at one speed. Even if it’s just a matter of varying the speeds from 6.0 – 7.5, I still have to do it. Here’s an example, which is what I did today:

Minutes Speed (mph)
0-3 4.0
3-5 6.0
5-7 7.0
7-9 6.5
9-11 7.5
11-13 6.0
13-15 7.0
15-17 6.5
17-19 7.5
19-21 6.0
21-23 7.0
23-25 6.5
25-27 7.5
27-28 6.5
28-32 4.0

By alternating my speeds every 2 minutes, it gives me mini goals of something to work towards. For me, it makes the time go by much quicker! Maybe it will do the same for you?!? 🙂

I was definitely glad that I got up and moving, because it helped a little with the tummy troubles and eventually got my appetite nice and ready for dinner. On the menu tonight?

IMG_7090

Turkey & Cheese Panini!

IMG_7093

I first coated the bread slices with some Eggplant Garlic Spread, and then topped it off with deli turkey and some fontina cheese that I picked up at the grocery store this weekend.

I’d never bought fontina cheese before, but I can certainly say this will not be the last time! Fontina is absolutely perfect for melting on panini sandwiches…just look at that oozing cheese! 😛

IMG_7091

A little added veggie bulk…

IMG_7092

‘Twas delicious! 😀

IMG_7089

I’m feeling I may need a little lovin’ from a special man later this evening…

IMG_7060

His name is Gingerbread. 😉

Question for the Evening:

How do you usually vary your treadmill runs/walks? Do you stay at one pace, or do you like to vary your speed?

Cookie Comas & Breakfast Dates

YAY for Sunday morning breakfast dates!! 😀

Before heading out though, a workout was in order; after last night’s indulgent snacks & massive cookie consumption, I woke up feeling rather sluggish. Ooof. 😳 I still have to go through all my photos from last night’s festivities, but I promise I will have a recap for you all later this afternoon. Here’s just a little sneak peek at what was right at my finger tips all night long…

IMG_7059

Yes. It was incredible.

Thanks to the cookie-coma from what you see above, I ended up sleeping a bit later and missed my morning BodyPump class (BOO). So instead, I did a nice little hodge-podge of workouts from Exercise on Demand:

I felt a thousand times better afterward! And that Incredible Abs 5 video? That is no joke! 😯

So finally, we headed out to a local place that we had recently heard great reviews of, “The Eatery” at Carol’s Place.

I knew immediately I was in for a treat when the waitress told us their flavored coffee of the day:

Caramel Apple(!!!)

IMG_7071

It was pretty darn delicious! 😛

And then to make things even more amazing, we were presented with a plate of homemade cinnamon apple bread to snack on.

IMG_7073

Oh.My.God.Amazing!

IMG_7074

For breakfast, I ordered “The Skinny” omelet: spinach, broccoli, tomatoes, & onions (no cheese, & substituted Egg Beaters)

IMG_7077

The omelet also came with home fries,

IMG_7076

and a side of toast. I was really feelin’ the rye today…must have something to do with the rye bread dip that I made yesterday?? 😉

IMG_7075

Quite a plate of food there, right? I was able to finish about 2/3 of the omelet, all of my toast, and maybe 1/4 of the home fries before throwing in the towel. I was pleasantly stuffed.

And thanks to our Entertainment Book coupon, our entire breakfast for the two of us only cost $11.28. Score! 😀

We followed up breakfast with a little more Christmas shopping and a trip to the grocery store. I’ll tell ya, grocery shopping is pretty easy when you can’t cook! 😉

Now I’ve got a little gift wrapping and photo editing to take care of while listening to some Christmas tunes. 🙂

Hope you’re all having a great Sunday!

Feelin’ Fantastically Festive

Happy FRIDAY everyone! Hope you’re all feeling fabulous today. 😀

I, on the other hand, am feeling Fantastically Festive!

IMG_6989

Last week, I was contacted by Alexander from me & goji, asking if I would be interested in designing my own custom cereal mix.

OH MY GOSH, YES! 😯

IMG_6987

Me & goji is the first custom cereal & granola company where you can design your own cereal from 60+ all-natural ingredients, and even name your creation. The cereal then arrives in a Cereal Capsule, designed for portability and keeping your mix fresh.

IMG_6988IMG_6991

When I first started browsing through the website, I was completely overwhelmed with all the choices that were available! And if you know me at all, you know that decision-making is not my strong suit. 😉

There is an abundance of super foods, organic ingredients, and purely decadent ones, too. So finally, after what seemed like almost an hour (!!!) I had my custom cereal mix:

IMG_6992

And it was even handmade by Adam’s Mom. 😉

IMG_6993

Of course, I had to dig right in…immediately.

IMG_6994

IMG_6995

Check out those cocoa almonds! How’s THAT for a nice little treat in your cereal mix?? I wonder if they’ll make my milk all chocolaty like my Cocoa Krispies used to when I was little?!? 😛

IMG_6998

I’m really looking forward to incorporating it into my yogurt bowl that I have planned for lunch today…

IMG_7016

(Plain Chobani + a spoonful of raspberry Polaner All-Fruit + blueberries)

 IMG_7017

Mmmm, Mmmm, MMMMMM! 😀

IMG_7015

Now I’m off to work…but hey, it’s Friday, it’s Pay Day, AND it’s a very SPECIAL DAY for a very special guy in my life…… 😉

Questions for the Day:

What’s your favorite cereal?

What would you put in your own custom cereal blend??

Rockin’ Out & Wrapping Gifts

Wow, it’s been a while since I gave you guys a full recap on the day’s eats, hasn’t it? Boy oh boy, where does the time go??? 😯

Alright, well let’s get this post started!

First up: today’s yumm-o breakfast; nothin’ new, but certainly a favorite of mine!

IMG_6957

I combined a container of vanilla Chobani with 1/2 a sliced banana + about 1/2 cup blueberries + a sprinkling of cinnamon.

IMG_6956

It’s another case of “hairy berries!” 😉

Once I got to work, I mixed everything all together with some Kashi Heart to Heart cereal + a little granola.

I ❤ yogurt messes. 😀

IMG_6964

Today’s coffee had to be enjoyed out of a regular mug, which I must say, I REALLY enjoyed! I don’t know, call me crazy, but it just felt so much “cozier” to enjoy my coffee at work out of a regular mug, rather than my travel mug?

Oh, and in case you’re wondering…coffee was enjoyed out of the travel mug because I happened to drive away yesterday morning with the full coffee mug still on the roof. 🙄 Needless to say, I think it may be busted. 😳

IMG_6962

Lunch

I was totally rushing to leave the house for work today, but this spectacular reason was sooooo worth it:

IMG_6952

I’ve really been lacking in the veggie department, and actually woke up craving a nice fresh veggie salad for lunch today. So I mixed up anything I could find in our veggie drawer: romaine, grape tomatoes, carrots, pickles, red peppers, and corn.

IMG_6953

I drizzled my salad with a little salad crack Newman’s Own Light Balsamic.

IMG_6954

On the side, I had a HUGE, juicy pear,

IMG_6958

and a little later, finished off the rest of my Popcorn Indiana Chip’Ins. Definitely gonna need to go get more of these babies…they’re fantastic!!

IMG_6960

Workout

My original plan for today was to hit up the gym after work for a little BodyPump, but after analyzing my “To-Do” list, I realized I’d be better off to just head home and do a workout there. Thanks to my trusty Exercise on Demand, I sweated it out (sorta) with a little Yoga Meltdown with my gal pal Jillian. 😉 No idea why, but today’s workout seemed super intense?!? It’s ok…I love feelin’ the burrrrrrn. 😉

Dinner

A random mix of sorts, but I was on my own so I just went with the first thing that came to mind: chicken sausage!

IMG_6968

Since we don’t have any rolls conducive to chicken sausages, I decided to slice up my link and place it on a whole Arnold’s Sandwich Thin.

IMG_6966

I then topped the other half with a slice of provolone cheese, plopped ‘em back on the stove top, and let ‘em get toasty and melty. Yummmm. 😛

IMG_6970

On the side, I roasted up some zucchinis with a little non-stick cooking spray, garlic powder, onion powder, salt, pepper, & oregano. They were actually a tid-bit spicy. 😯

IMG_6967

IMG_6965

Now I’m in the process of doing up some laundry, rockin’ out to Christmas tunes on Pandora, and wrapping up some Christmas presents. I’ve got a Blogger Holiday Gift Exchange gift to send out tomorrow……

Maybe it’s YOURS! 😉

IMG_6971

I just love the holiday season!!

Question for the Evening:

Do you enjoy wrapping presents or do you find it tedious?

I love it! I just crank up the Christmas tunes, set out all my supplies, and get to work. 🙂

Enough Is Enough!

It’s no secret I’m just a little obsessed with pumpkin.

I will eat it in pretty much anything, at any time. Put it in a baked good, and I’m happy. Mix it into a pasta dish and I’m ecstatic.

And pumpkin oats? Well, there’s never really been a question…it’s flippin’ fantastic!

However, I think today may be the first time ever in the history of my pumpkin consumption that I overdid it. 😳

IMG_6851

Somehow, I got a little heavy-handed with the pumpkin this morning while prepping my oats to bring to work with me. To go along with my normal oats measurements, I added probably > 1/2 cup pumpkin. Yeah, a little much. 😯

Luckily, I had a sweet, chocolaty piece of sweet potato chocolate chip bread to crumble on top, which helped counteract the overpowering pumpkin flavor. I’d have the say the bread saved the day. 😉

IMG_6852

Don’t get me wrong, it was still pumpkin oats; it was still delicious. 😛

IMG_6853Dinner

I’ve been craving a “normal” dinner to be consumed in our house for a couple weeks now. I miss the intimacy of a sit-down dinner, after a dedicated time of preparation. Knowing that my prep choices are somewhat limited, I knew I could still do more. Enough is enough!

So I created a nice festive ambiance…

IMG_6856

Broke open a bottle of wine…

IMG_6855

And even took out some real dishes!

IMG_6854

That’s right! I pulled out the “real deal” for me and the hubby tonight. Who needs a kitchen table?? 😉

IMG_6857

Tonight’s dinner started off with something I’ve really been lacking a lot of lately…veggies.

So I put together all the veggies I could find in our fridge to make a nice big salad.

IMG_6858

Veggies included some romaine, cukes, grape tomatoes, carrots, red onion, and dill pickles. Then for a little bulk, I added a couple slices of oven roasted deli turkey and a sprinkling of shredded cheese.

IMG_6859

I’m usually one to say that salads are always so much better when someone else makes them; however, this salad tasted absolutely fabulous. Crisp, fresh, exactly what I needed. 🙂

On the side, Jay and I shared the remaining portion of my leftover Pasta Fagioli. This stuff went a long way!

IMG_6860

As Jay and I were sitting enjoying our “real meal,” we happened to notice someone eyeballing us from afar…

IMG_6863

So of course I snagged him to try to get a sporadic family photo. He was obviously super enthusiastic about it. 😉

IMG_6862

***On another random side note…***

I happened to get a super fun notification on my Facebook page today! Our wedding photographer just recently added some new photos from our wedding to her “Winter Weddings” album.

In case you’re interested in checking out the rest of ‘em, here’s the link:

Courtney & Jay’s Wedding Photos on Facebook

Our photos are mixed in with some others, but we’ve got probably 30+ photos of just ours in there. Some of them I had totally forgotten about, too! They’re so much fun to look at. 🙂 I still can’t believe that our One Year Anniversary is less than a month away…that’s just crazy to me!! 😯

I’m pretty sure that I may need to break into my Dark Chocolate Turtle Graham Bars tonight for a little dessert while catching up with last night’s DVR’d Modern Family. Sounds like a perfect night to me!

Just Call Me Debbie…

Just a friendly reminder: If you haven’t yet checked out the “Bring SnackJoy to Life Personality Contest,” make sure you take a peek! I’ve got my fingers crossed and am really hoping my slogan for The Laughing Cow’s Light Blue Cheese will win the coveted personality. To check out the goods and (hopefully) give me your vote, go ahead and CLICK HERE! Thanks guys! 😀

So today has been a little bit of a whirlwind of a day, and a hate to admit it but…

I’m totally rockin’ the “Debbie Downer” attitude tonight. 😳

To start, the stress of the kitchen remodel is really starting to take a toll on Jay and I. We certainly didn’t expect it to be easy, but after a few unexpected discoveries…which lead to a few unexpected expenses…I guess we’re just plain frustrated. We’re ready for the work to be done, we’re ready to stop eating off plastic plates, and we’re ready to have our kitchen back to one room (rather than being dispersed throughout the entire house).

IMG_6634

As if the kitchen woes weren’t already enough, I also found out some discouraging news earlier in the day which put a pretty good damper on my mood. Hmmph. 🙄

But hey, I guess I’m just having “one of those days.” We’re all entitled to ‘em, right? Now that I’ve gotten that off of my chest, I can already feel a little weight lifting…

So let’s not dwell on the negative; let’s focus on some positives – like FOOD. 😉

Today’s breakfast came in the fabulous form of a peanut butter + pumpkin sandwich.

IMG_6825

I topped half of an Arnold’s whole wheat sandwich thin with some White Chocolate Wonderful peanut butter, and the other half with a mix of pumpkin + pumpkin butter + cinnamon. It was deeeeLISH. 😛

IMG_6826

I also rocked a killer Asian pear with breakfast. These pears are just fantastic. No doubt about it.

IMG_6827

And of course some joe-to-go! 😉

IMG_6829

IMG_6828

Lunch

Ohhhh blueberries, how I’ve missed you so!

IMG_6822

A typical Monday Tuesday(?) Usual, plus an unphotographed honey graham Clif Z Bar.

IMG_6820

PLUS, a little slice of heaven…aka, sweet potato chocolate chip bread. I’ve really gotta try to get my hands on this recipe!! 😯

IMG_6823

Dinner

After getting home from work and errands, my miserable mood left me wanting a dinner with as little fuss as possible. Thank goodness for leftovers!!

IMG_6830

Tonight I had 1-1/2 slices of my leftover pizza from last night’s get-together.

I now have a new-found love for fresh spinach + eggplant on my pizza.

IMG_6831

And let’s not forget my affinity for goat cheese pizza now too. Can you see where I picked off my olives?? 😉

IMG_6832

Thankfully, the combination of pizza + chatting with the hubby + watching the Food Network helped lift my spirits.

This guy did a pretty good job, too. 🙂

IMG_6836

I’m thinking some chocolate is going to be needed in my future…time to go hunt some down before One Tree Hill starts!

Thanks again for dealing with my “Debbie” attitude tonight my friends…it’s nice to know I have you all to “vent” to. 🙂

Question for the Evening:

What do you do when dealing with a “Debbie Downer” attitude?
