Breaking Up The Work

Spending four hours of my Sunday doing all of the grading the I procrastinated doing during the week = total bummer. Ughh. 😳 One of these days I’ll learn!

At least I was able to break up the work with some football & a couple trick-or-treaters. And I must say, I was quite proud of the fact that I only stole one piece of candy from the candy bowl! 😯


Then a little while later, I figured hey, a little wine never hurts either…


Oh yeah, and dinner’s a pretty good way to break up the work too. 😉


Jay and I decided a quick and simple dinner was in order, so we cooked up the package of ravioli that I got last weekend at Trader Joe’s.


I topped my ravioli off with some sautéed onions and broccoli (which were generously coated in some Garlic Gold seasoning), marinara sauce, and some fat-free Mediterranean feta crumbles.



To be perfectly honest, I wasn’t a huge fan of the ravioli. 😦 I didn’t really love the flavor of them…must have been the mushrooms? Luckily, I had cooked up a boat-load of broccoli, so I didn’t feel deprived.

But even though I wasn’t huge fan of the ravioli, here’s a couple things I am a fan of:


Watching Cody fall asleep in the funniest positions EVER.


AND, the fact that I have this huge bowl of candy sitting in my house…


with no more trick-or-treaters in sight.

Yeah…hubby was nervous we wouldn’t have enough candy after the 4th trick-or-treater came, so he went out to get some more.

That was about 2 hours ago, and we haven’t seen one since. Looks like it’s gonna be time to get creative in the kitchen!! 😉

Happy Halloween! Are you being festive today??? I may not be in costume, but I’m definitely sportin’ my favorite Halloween socks! 😉


We’ve also got our mini bowl of Halloween candy ready for the one or two potential trick-or-treaters we might get. (Our house gets few, if any!)


I’m hoping the weather clears up soon though…


…otherwise I’m gonna be left with lots of leftovers! 😯 😉

I’m sure I just made anyone who knows that I have a younger brother a little nervous & curious, didn’t I?? 😉


Isn’t he adorable?? Last night, Jay and I headed over to Sarah & Jeff’s house to meet the new addition to their family. Tram is a Morkie (Yorkie + Maltese) and is the cutest little thing I’ve ever seen. I might steal him…watch out Sarah! 😉

So we didn’t ONLY go over to meet little Tram, but also to celebrate Sarah’s birthday, which included one of my favorites: Funfetti Cake!


I enjoyed every.last.bite. in the healthiest way possible, of course. It’s been a while since I’ve had Funfetti + Rainbow Chip frosting. Yummmm. 😛


While eating our cake, the boys had a little more fun with Tram…

This morning, I got up bright and early to head to the gym, where I spent 45 minutes on the treadmill doing some interval running. I ended up covering just shy of 4.5 miles in 45 minutes, which also included a bit of power walking on a heavy incline. It was a good, sweaty workout.

After showering and getting ready, I went to meet my friend Heather for a Starbucks date! Believe it or not, I haven’t seen Heather since before I went to Vegas in August!

While we sat and chatted, I enjoyed a delicious Pumpkin Spice Latte,

IMG_6014along with a banana (which I forgot to photograph until AFTER I ate it) and a slice of Cranberry Apple Bread that I brought from home. 🙂


I had some grocery shopping to take care of after our Starbucks date, so by the time I got home, I was already starving again. I quickly grabbed a plain Chobani and mixed in about 2 tsp of sugar-free vanilla pudding mix. Julie was absolutely right…what a delicious idea! 🙂



I also brewed up a little coffee, at the hubby’s request. Hey, what’s a little more caffeine, right? 😉


The rest of the day looks like some school work, football, and waiting for trick-or-treaters (hopefully!).

Halloween Party Recap + Two Flank Steak Dinner Ideas

Today has been a much-needed, lazy day in the Horan household. 🙂

Last night, Jay and I had a Halloween party to attend…you like our costumes??


We actually recycled these costumes from last year, when we went as some of the “Average Joe’s” from the movie Dodgeball. Last year, we were a foursome with our friends Joe & Kate…


but this year, Jay and I had to go as a twosome. We really didn’t feel like spending any more money on costumes, and when it comes to Halloween, I’m ALL about comfort. Case in point:

So anyways, last night’s party was a blast! I can’t say I’m really surprised…whenever we get together with my favorite college crew, it’s always a party! 😀


Eileen decided to go as a cat burglar, since she’s always been kind of obsessed with cats. 😉 Too bad she wasn’t very good at keeping an eye on her loot!

There was definitely enough food to go ‘round…I lost track of what entered my belly. Probably better off…I don’t really want to know how much of that I consumed. 😳

It was a great party, but I’m definitely feelin’ a little tired today. 😉

After spending a few hours lounging on the couch, catching up on school work, and watching our DVR’d Jersey Shore finale (which I was kind of disappointed with?), it was time to make some dinner.

A few weeks back, I won a contest through the Foodie Blogroll for some free grass-fed flank steaks. I was stoked…who doesn’t love winning free stuff?? 😀

The steaks came from Hearst Ranch, which sells only humane-certified, sustainably-farmed, no-artificial hormone/no-antibiotic meats. That made me happy.

When it comes to eating red meat in this house, I have one stipulation: I will eat it, but I won’t cook it. I just never felt comfortable cooking steaks, but it doesn’t mean I won’t eat them. So whenever hubby feels like taking the reigns, then I’ll go with it.


Earlier today, he marinated the meat with a recipe that he said he found online. It was able to sit for about 5 hours, so it had a good amount of time to soak in the flavors before grilling. If you like soy sauce, then you’d definitely like this marinade. We both decided it was good, but I don’t know if we’d use it again…

Flank Steak Marinade

  • 1/4 cup soy sauce
  • 2 tbsp water
  • 3 cloves garlic, thinly sliced
  • 1 tbsp brown sugar
  • 1 tbsp oil
  • 1/2 tsp ground ginger
  • 1/2 tsp pepper

Combine all ingredients, mix well. Add to steak, cover, and refrigerate, turning occasionally.

While hubby took care of the grill, I got to work on sautéing some peppers and onions.


After having our steak, peppers & onions ready to go, it was time to start prepping the final products: quesadilla for him, steak wrap for her.

Using some LaTortilla Factory wraps, I started by melting some mexican cheese in Jay’s quesadilla. Once the initial layer was melted, I added in the peppers & onions, steak, and a little more cheese. Then, all you gotta do is fold it over, press, and hold for about a minute. Flip it once, then you’re done!


To make my wrap, I first started by adding my peppers & onions, followed by a few strips of steak,


Next I added in some President Herbed Fat Free Feta crumbles.



Then I got really crazy and added a tiny drizzle of reduced-fat Ranch dressing.

Jay let me try a couple bites of his quesadilla…definitely delicious!


But not quite as delicious as my wrap was! We both decided that the combo of feta + ranch dressing was perfect.



On the side, I enjoyed some roasted veggies. Actually, they were more like slightly charred veggies, but I like ‘em that way. 😉


Lucky for us, we already have some dessert in mind for this evening. But I think somebody else has them in mind too…


I don’t know how I feel about you guys eating cookies that look just like me, Mom…”



I’m thinking that some of these dunked in my Mom’s homemade applesauce will be the perfect way to end my Sunday!
