Happy Memorial Day!

Today was SUCH A FUN DAY! ๐Ÿ˜Ž

Before heading over to Sarah & Jeff’s for a bbq, I did a killer workout!ย  I ended up doing a high intensity interval training workout that I saw a couple days ago over on Jessica’s blog…WOW!

Warm Up – 5 minutes

Sprint @ 9.0mph – 20 seconds

Jog @ 5.5-5.0mph – 40 seconds

Repeat for 15 minutes

Run for 5 minutes @ 6.5mph

Cool Down – 5 minutes

At first I thought, ahhh 20 seconds, no biggie!ย  But WOAH – this was intense…in a good way ๐Ÿ˜‰

Then it was ALMOST bbq time, but I had to finish up the rest of my goodies! ๐Ÿ˜€ย  Thanks again, to Jessica’s blog, I whipped up a batch of some Peanut Butter Pretzel Truffles.

I started by mixing up 1/2 cup chunky peanut butter & 1/4 cup finely chopped salted pretzels.

Then form the dough into balls, about a teaspoon in size.ย  I got 20 out of my batch.

Pop them in the freezer for about an hour.ย  Then, you roll them in some melted milk chocolate (I had some Hershey bars on hand from a previous s’mores night, so I used 2-1/2 of them which was the PERFECT amount).

I put them in the cooler on the way over to the bbq to keep them from melting…along with a batch of my Chocolate Butterscotch Cheesecake Cookies!!ย  Both of them were a big hit! ๐Ÿ˜‰

I of course had to sample one before I brought them out…they passed the test. ๐Ÿ˜‰

Today was the perfect day for a bbq!ย  We all had a great time hanging out by the pool, chatting, eating yummy foods, & enjoying some tasty drinks.ย  Here’s a look at the day. ๐Ÿ™‚

I chose a veggie burger with cheese from the grill, topped with a little ketchup & mustard.ย  I also had some of Christina’s delicious mac salad & some melons (those were not the “drunken melon” but I definitely had my fair share of those throughout the day!)

Then Andrea broke out her super-cute Memorial Day cake!ย  And what kind of cake was it you ask?ย  SODA CAKE!ย  She used a chocolate cake mix with just regular diet pepsi…it was as moist and delicious as ever. ๐Ÿ˜›

My piece – I also had one of my cookies which went undocumented. ๐Ÿ˜‰

Some margaritas were making their way around the pool today!ย  This one was made with fresh blueberries, raspberries, and strawberries.ย  It tasted fab. ๐Ÿ˜€

Perfect Pancakes

Happy Memorial Day everyone!ย  I hope you’re all enjoying your day, and hopefully spending it with some good friends or family. ๐Ÿ™‚

So yesterday I decided to take the day off from blogging.ย  We had a couple different parties to go to, and I just didn’t feel like having to explain to a bunch of people I didn’t really know why I was snapping photos of my food. ๐Ÿ˜‰ย  I’m sure you all understand!ย  But I can tell you that we had a great day filled with lots of fun friends, family, & food.ย  There’s nothing like a barbecue on a nice warm day, am I right?ย  Part of our day was spent up on Saratoga Lake, just hanging out on the party boat, catchin’ some rays, and chit-chatting away.ย  It was awesome! ๐Ÿ™‚

Fast-forward to today, and I have been “a girl on the go”!ย  Yesterday, I didn’t set an alarm and let myself sleep in until 10:30 (haven’t done that in FOREVER!)ย  TODAY by 10:30, I have already gone grocery shopping, cooked up a batch of roasted veggies to have for the week, baked a batch of cookies, washed a crap-load of dishes, and also made some DELICIOUS PANCAKES! ๐Ÿ˜›

I saw this recipe last week on Tina’s blog, and knew I had to give them a try.ย  I kept the entire recipe the same, except I ended up throwing in a tablespoon of brown sugar into the mix too.ย  I was surprised when her recipe said it made 8 pancakes, because I got 13 out of my batch!ย  It must be a sign…13 is my “lucky” number. ๐Ÿ˜‰

I threw some mini chocolate chips into 2 pancakes for the hubby, and made about 4 pancakes with some fresh blueberries I picked up at the store this morning.

His & Hers (as always) ๐Ÿ˜‰

Delicious Pancakes

Ingredients:

  • 1.5 cups all-purpose flour
  • 3 tsp baking powder
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 tbsp brown sugar
  • 1.5 cups light vanilla soy milk
  • 3 oz. plain Greek yogurt (I used Chobani)
  • 1 egg
  • 1 tsp canola oil

Directions:

  • Combine all ingredients in a large mixing bowl.
  • Heat griddle over medium heat & coat with non-stick cooking spray.
  • Drop 1/4 cupfuls of batter onto griddle
  • Cook each pancake for 2-3 minutes then flip.ย  Cook on the other side for about 1 minute.
  • Serve with your favorite toppings…ENJOY! ๐Ÿ˜€

I topped my pancakes with a drizzle of light syrup & more fresh blueberries.ย  You can add 1 more pancake to this plate, because I totally went back for one more.ย  They were SO GOOD!ย  Light & fluffy, not too sweet, with nice crispy edges…just how I like ’em ๐Ÿ™‚

We also enjoyed some fresh “margarita iced coffee” with breakfast, courtesy of the hubby, who brewed some up while I was grocery shopping.

In a little while, I’m planning on a nice hot & sweaty run, since I’ve taken the last 2 days off & have been enjoying more treats than normal. ๐Ÿ˜‰ย  I have one more batch of “goodies” to make, and then Jay & I are headed over to Sarah & Jeff’s house for a barbecue.ย  Seriously, I cannot get enough of these things once the weather gets nice!

He Liked It So He Went And Put A Ring On It…

Nooo, not me sillies…I already got my ring!ย  BUT…

Our cousin Sarah & her man Jeff are ENGAGED!!

Jeff and I have been in “cahoots” for the past week, planning a little surprise gathering at their new house for when they returned from the big moment!ย  Jeff brought Sarah up to Saratoga Lake for the big proposal, and then, unbeknownst to her, came back to the house for her to “grab a couple things so they could head back out to share the news”.ย  Well, Sarah was quite surprised to walk into her house and see 8 of her closest friends!ย  Can’t you tell?

It all worked out PERFECT, and everyone had a great time!ย  We had quite a yummy spread of food & drinks too, which everyone helped throw together, literally in the matter of hours.ย  Because while I was aware of what was going to most likely be happening, the rest of the crowd didn’t find out until a few hours before! Having fun celebrating!

I munched on a bunch of snacks throughout the night, and never even ended up using a plate (which is usually trouble).ย  I definitely dominated Andrea’s garbage bread (maybe 4-5 pieces?)…so good!ย  And the italian pastries…ohh wow were they delish! ๐Ÿ˜‰ย  I had a canoli and a piece of off some chocolate/cookie/pudding roll that was out of this world!

I really couldn’t be happier for these two…they SO deserve this! ๐Ÿ˜€

SATC2 With My Girls

Hey guys!ย  Sorry, I’m a little behind today, my morning went by quicker than I thought, so once I ate breakfast, it was a mad dash out the door.

Breakfast

I got a sudden urge to cook a nice eggs & toast breakfast for me and the hubby this morning, so that’s exactly what I did.ย  I mixed up some diced peppers, onions, & grape tomatoes, sauteed them up for about 5 minutes, then added in the eggs.ย  For the 2 of us, I used 2 whole eggs + 1/2 cup egg beaters.

I split the “veggie scramble” almost in 1/2 (hubby got a little more), and topped his with American cheese, and mine with a slice of Sargento reduced fat provolone cheese.ย  I LOVE provolone cheese!! ๐Ÿ˜›

I paired my veggie scramble with a lightly toasted whole wheat Arnold Sandwich Thin.ย  Half got some yummy Maple PB, and half got some strawberry jam.ย  Both were delish! ๐Ÿ˜‰

After breakfast, which was more like brunch at 11am, I was out the door to meet up with my girls to see Sex and the City 2!!ย  We all went together back when the first movie came out, so we knew we had to do it again.

Our group of 5 has stayed super close ever since we met back in college.ย  We try to get together as often as possible, and as you can see, we always have such a fun time together! ๐Ÿ˜€

After the movie today, we all went to grab something to eat at Mocha Lisa’s Caffe.ย  I ordered myself the Chicken & Veggie Wrap, which was a spinach wrap filled with grilled chicken, crumbled feta cheese, romaine, diced red and yellow peppers, red onion, and a red pepper spread.

This wrap was ENORMOUS!ย  It tasted delicious, but I was a little disappointed when I saw it was mayo-based.ย  I guess when I read “red pepper spread”, my mind automatically went to thinking of “hummus”.ย  And of course, the wrap was dripping with the stuff, so I tried let as much “drip out” as I could. ๐Ÿ˜‰ย  I ate 1/2, and ended up just picking out most of the chicken from the other 1/2.

The wrap also came with chips, so I picked these Sweet Maui Onion kettle chips by Deep River Snacks.ย  I’ve had a few different varieties of these chips and they never disappoint!ย  They’re all REALLY good!ย  Jay’s a big fan of the Mesquite flavor. ๐Ÿ™‚

Jay and I have some FUN STUFF planned for tonight, but it’s top secret!ย  I’ll fill you guys in later ๐Ÿ˜‰

I thought the movie was alright, but a little predictable.ย  I actually liked the first one a lot better!

Raw Bar Friday

Last night, Jay and I met up with our friends Joe & Kate, and Josh & Erika at the first Raw Bar of the season at the Park Pub.ย  The Park Pub is literally, less than a 2 minute drive from our house, so it’s super convenient!

It was a beautiful night, so we were able to enjoy our evening out on their open patio, which was hoppin’!

The chef, Brad, is so talented, and put offers such a great spread of seafood.ย  On Friday’s, they offer their Raw Bar menu, in addition to their regular menu, which are both full of lots of goodies.

Check out some of these goodies…and look at the size of that lobster!!

I started things off with a nice cold beer, and Jay and I shared a basket of the BEST EVER sweet potato fries! ๐Ÿ˜›ย  I can’t come here without getting them.

One of the great things about the Raw Bar, is that it offers many items individually.ย  So, since I was feeling a little adventurous, I decided to take advantage…

I ordered 1/2 dozen JUMBO shrimp – one of which I let Jay try ๐Ÿ˜‰ย  He said it was “ok”.ย  I said they were delicious!

1/2 dozen Snow Crab Claws which were so sweet, juicy, and meaty.ย  SO GOOD! ๐Ÿ˜€

Then my adventurous self decided to order 1 oyster & 1 little neck clam ๐Ÿ˜‰

A little nervous!…

The verdict?!?ย  The oyster pretty much tasted like cocktail sauce, since it slides right down your throat.ย  So in that sense, it was good.ย  But I don’t think I would pay to order them out, because why pay all the money to taste cocktail sauce?ย  I don’t know…I guess I don’t get the total appeal yet?ย  And for the clam…yup, definitely not for me!ย  I’ve tried steamed clams before which were ok, but raw…no thank you! ๐Ÿ™‚

I was so proud of hubby tonight…he had NEVER tried any sort of fish fry or fish and chips dinner (crazy, right?!?), so he figured tonight was as good a night as any.ย  He went with the fish & chips and he REALLY liked it!ย  YAY! ๐Ÿ˜€ย  I tried a bite of it too and it was delish.

After hanging out on the patio for almost 3 hours, we decided to end the night with a bonfire.ย  It was a later night than normal (Friday’s I’m usually ready to pass out by 10:00!) but we had an awesome night with great food and great friends! ๐Ÿ˜€

Unexpected Sweets = Fabulous

Is anyone else as psyched as I am that today is Friday?!?ย  Seriously, it couldn’t have come quick enough! ๐Ÿ™‚

Today’s lunch was totally YUMMY, with the addition of some unexpected “sweet treats” here at work today. ๐Ÿ˜›

I started off with a delicious salad combo topped off with some leftover sweet potato risotto.ย  I know, I know, I made this forever ago, but I swear it’s still fine!ย  I promise, whatever is not gone after this weekend is getting tossed… ๐Ÿ˜‰ย  Underneath the risotto “blob” is some romaine, carrots, grape tomatoes, green pepper, broccoli, and pickles.ย  Yup, I love dill pickles ๐Ÿ™‚

I topped off my salad with a quick little homemade vinagrette I threw together last night.ย  I mixed balsamic vinegar, a little EVOO, and some of this bread dipping blend.ย  The parmesan blend is my fave…it was perfect!

I also packed up an orange, some Livin’ Spoonful crackers, and a raspberry flavored Chobani, but they are currently on hold, thanks to a couple sweets that made their way to my belly!

Sorry for no photos, but I will let you know that I thoroughly enjoyed a delicious piece of funfetti cake and a small brownie with frosting, which were baked by some of my co-workers today.ย  They were amazing!

I’m super excited for tonight!!

Jay and I are meeting up with some friends of ours at a local restaurant (a 10 minute walk from our house) for the first night of their summer Raw Bar which they do on their outdoor patio.ย  We know the chef personally, and he always puts out such a fabulous spread!ย  So we’re going to be heading down there when Jay gets out of work today for happy hour & dinner.ย  I’m thinking perhaps a bonfire may be in order too?!?ย  We’ll have to see where the night brings us!

The Great Dress Debate

So, as many of you may or may not know, I have a very special WEDDING coming up next weekend for our friends Joe & Kate.ย  Aren’t they so cute? ๐Ÿ™‚

On Wednesday, before meeting up for dinner with Gabby, I did a little shopping at the mall. ๐Ÿ™‚ย  I ended up leaving with 2 dresses which could be possible contenders for the wedding, but I was all by myself and really couldn’t decide.ย  So, what’s a girl to do?

Well, if she has her own blog, she asks her readers for help! ๐Ÿ˜€

Ok, so I have 3 contending dresses all together – the 2 I just bought, and 1 that I already have, which I actually wore to my own rehearsal dinner.ย  My fabulous hubby did a great job playing “photog” yesterday, so I could share all of the dresses with you.ย  So here we go, let’s take a look…

Dress #1 – Floral Strapless

Pros: I love this dress for the POCKETS!ย  I don’t know what it is, but I totally have a thing for pockets on dresses – not only for the comfort, but also because I think they add such a nice, modern twist to what could be a classic looking dress.ย  The top of this dress also kind of reminded me of the asymmetrical one that J-Lo wore to this year’s Academy Awards (which is weird because I really didn’t like that dress!)

Cons: It’s strapless, which means I may possibly be picking and pulling at it all day/night.

Dress #2 – Nine West

Pros: You can’t go wrong with any combo of black + white + another color.ย  Always classic looking.ย  I really like the V-neckline, which I find flattering, and the length is one that would leave me feeling very comfortable and not self-conscious about showing too much while out on the dance floor. ๐Ÿ˜‰ย  Plus, I could wear these shoes!

I COMPLETELY forgot I even owned these!ย  How could I?!?ย  I found them shoved in the back of my closet just this past weekend.ย  I bought them at Marshalls probably almost 2 years ago – they were $120 shoes by Tahari, which were on the clearance rack for $19.99!!!ย  They’re way too high for an everyday shoe for me, but for special occasions, sure thing!

Cons: I was trying not to wear too much black, just because I wanted to embrace the upcoming summer season with bright, cheery colors.ย ๐Ÿ™‚ Plus, it was also the most expensive dress.

Dress #3 – Banana Republic, already owned

Pros: I already own this dress, so it wouldn’t cost me anything.ย  I love the color, which is nice and bright, and it has a really cool starburst pattern around the waist area.ย  PLUS, I would have an excuse to wear THESE super cute shoes which I’m supposed to be saving for my friend Joelle’s wedding in October, but shhhh! ๐Ÿ˜‰

Cons: The material is a bit heavy, and makes me think a little more of a colder weather dress.ย  The neckline is also a little less exciting to me than the other two dresses.ย  Plus, then I’d have to return BOTH of the dresses I just bought, rather than just one. ๐Ÿ˜‰
