How I Beat Boredom On The Treadmill

Thanks to some tummy troubles, my appetite has been a little off today. 😳 I’m pretty sure I probably have my super-duper sugar intake as of late, plus the joys of being a lady to thank for today’s discomfort. Ahh well…life goes on!

I started things off with a little cereal combo: Quaker Oatmeal Squares + Fantastically Festive me & goji mix + skim milk.


Along with my cereal & mug-o-joe, I also brought a perfectly ripe banana, which I snacked on mid-morning.


By the time lunch rolled around, I really didn’t have too much of an appetite, yet I could feel my stomach grumbling…does anyone else ever get that feeling? It’s a weird one!

An always delicious pineapple flavored Chobani, topped with some Kashi Heart to Heart + granola


Carrot sticks, red peppers, & grape tomatoes…all of which are on their last leg. 😯


And an also-sad-looking pear which, despite it’s rather “homely” appearance, tasted quite fantastic.









By the time I got home from work, all I really wanted to do was curl up on the couch in a ball while watching TV. However, something was telling me that I should really try to get moving. I weighed the pros and cons of skipping the workout, and of course, the cons totally outweighed the pros…it was a simple case of me just being lazy. 🙄

So I threw on the workout clothes, grabbed my iPod, and hopped onto the treadmill. I wasn’t feelin’ any HIIT workouts today, so I decided to just go for a steady, 3-mile run.

Now, steady for me is never one set speed. No matter what, I just cannot run at one speed. Even if it’s just a matter of varying the speeds from 6.0 – 7.5, I still have to do it. Here’s an example, which is what I did today:

By alternating my speeds every 2 minutes, it gives me mini goals of something to work towards. For me, it makes the time go by much quicker! Maybe it will do the same for you?!? 🙂

I was definitely glad that I got up and moving, because it helped a little with the tummy troubles and eventually got my appetite nice and ready for dinner. On the menu tonight?


Turkey & Cheese Panini!


I first coated the bread slices with some Eggplant Garlic Spread, and then topped it off with deli turkey and some fontina cheese that I picked up at the grocery store this weekend.

I’d never bought fontina cheese before, but I can certainly say this will not be the last time! Fontina is absolutely perfect for melting on panini sandwiches…just look at that oozing cheese! 😛

Rockin’ Out & Wrapping Gifts

Wow, it’s been a while since I gave you guys a full recap on the day’s eats, hasn’t it? Boy oh boy, where does the time go??? 😯

Alright, well let’s get this post started!

First up: today’s yumm-o breakfast; nothin’ new, but certainly a favorite of mine!


I combined a container of vanilla Chobani with 1/2 a sliced banana + about 1/2 cup blueberries + a sprinkling of cinnamon.


It’s another case of “hairy berries!” 😉

Once I got to work, I mixed everything all together with some Kashi Heart to Heart cereal + a little granola.

I ❤ yogurt messes. 😀


Today’s coffee had to be enjoyed out of a regular mug, which I must say, I REALLY enjoyed! I don’t know, call me crazy, but it just felt so much “cozier” to enjoy my coffee at work out of a regular mug, rather than my travel mug?

Oh, and in case you’re wondering…coffee was enjoyed out of the travel mug because I happened to drive away yesterday morning with the full coffee mug still on the roof. 🙄 Needless to say, I think it may be busted. 😳



I was totally rushing to leave the house for work today, but this spectacular reason was sooooo worth it:


I’ve really been lacking in the veggie department, and actually woke up craving a nice fresh veggie salad for lunch today. So I mixed up anything I could find in our veggie drawer: romaine, grape tomatoes, carrots, pickles, red peppers, and corn.


I drizzled my salad with a little salad crack Newman’s Own Light Balsamic.


On the side, I had a HUGE, juicy pear,


and a little later, finished off the rest of my Popcorn Indiana Chip’Ins. Definitely gonna need to go get more of these babies…they’re fantastic!!



My original plan for today was to hit up the gym after work for a little BodyPump, but after analyzing my “To-Do” list, I realized I’d be better off to just head home and do a workout there. Thanks to my trusty Exercise on Demand, I sweated it out (sorta) with a little Yoga Meltdown with my gal pal Jillian. 😉 No idea why, but today’s workout seemed super intense?!? It’s ok…I love feelin’ the burrrrrrn. 😉


A random mix of sorts, but I was on my own so I just went with the first thing that came to mind: chicken sausage!


Since we don’t have any rolls conducive to chicken sausages, I decided to slice up my link and place it on a whole Arnold’s Sandwich Thin.


I then topped the other half with a slice of provolone cheese, plopped ‘em back on the stove top, and let ‘em get toasty and melty. Yummmm. 😛


On the side, I roasted up some zucchinis with a little non-stick cooking spray, garlic powder, onion powder, salt, pepper, & oregano. They were actually a tid-bit spicy. 😯



Now I’m in the process of doing up some laundry, rockin’ out to Christmas tunes on Pandora, and wrapping up some Christmas presents. I’ve got a Blogger Holiday Gift Exchange gift to send out tomorrow……

Fun At The Football Game!

Hey, you win some…you lose some!


Despite a disappointing loss from my Jets yesterday, our crew still managed to have a good time. 🙂

The ride down to the stadium encouraged the opening of the TJ’s peanut butter pretzels I’ve been holding onto for almost a month and a half now


I don’t anticipate these being around much longer now…HOLY YUM-O! 😛


Once we got down to the game, the weather was still dry so we hung out and did a little tailgating (my favorite!)


I promise Joe & Kate…I mean that in the BEST way possible! 😉


Normally when my family goes down to Jets games, we like to really get into the tailgating; coolers packed, snacks stashed, and the grill smokin’! Unfortunately, since the forecast was calling for bad weather, we decided to keep things simple by packing some snacks and picking up some subs on the way.


These chip’ins popcorn chips from Popcorn Indiana may seriously be one of my new favorite snacks. I already loved their kettle corn, but after picking these up at the store, I think they may take the cake. They’re light, salty, and totally unique in texture. Two thumbs up from me! 🙂


I also ordered a bomb-diggity sub of honey smoked turkey & provolone with lettuce, tomato, onion, pickles & honey mustard. YUM!



And of course, what December 12th football tailgating would be complete without some Christmas cookies? I munched on two of my M&M chocolate chip cookies while chatting away.


Unfortunately, the longer we were sitting outside, the wind started to pick up and it started to get rather chilly. I noticed my Raynaud’s disease kickin’ in…


…so I decided to start with the layering! The general consensus after all layering was complete was that I looked like a linebacker. Hey, you think they’ll hire me?


About an hour and a half before game time, we made our way up and into the stadium. I must say, the new Jets stadium is pretty impressive!




To ensure that my poor little fingers were toasty warm, I made sure to pack up all my hand warmers I’ve acquired over the years; hand warmers make great stocking stuffers for me! 😉


They worked like a charm!


Luckily, it didn’t rain for the entire game – probably only about half of it. We all agreed that the weather definitely could have been worse, and that we all had a great time…even if only two out of four of us could claim “victory.” 😉

I’m pretty excited for tonight…I’m going to be heading over to my parents’ house to “borrow” their kitchen so I can “host” my Nasoya “Wrappy Hour” party!


A couple months ago, I was chosen as one of the lucky hostesses from Nasoya and was given a goody bag of some great products to use.


I’ve never ventured into using anything with won ton wrappers or anything like that, so it should be interesting!

But for now, I’m off to work! Hope you all have a Marvelous Monday ahead of you!!

So today has been a little bit of a whirlwind of a day, and a hate to admit it but…

I’m totally rockin’ the “Debbie Downer” attitude tonight. 😳

To start, the stress of the kitchen remodel is really starting to take a toll on Jay and I. We certainly didn’t expect it to be easy, but after a few unexpected discoveries…which lead to a few unexpected expenses…I guess we’re just plain frustrated. We’re ready for the work to be done, we’re ready to stop eating off plastic plates, and we’re ready to have our kitchen back to one room (rather than being dispersed throughout the entire house).


As if the kitchen woes weren’t already enough, I also found out some discouraging news earlier in the day which put a pretty good damper on my mood. Hmmph. 🙄

But hey, I guess I’m just having “one of those days.” We’re all entitled to ‘em, right? Now that I’ve gotten that off of my chest, I can already feel a little weight lifting…

So let’s not dwell on the negative; let’s focus on some positives – like FOOD. 😉

Today’s breakfast came in the fabulous form of a peanut butter + pumpkin sandwich.


I topped half of an Arnold’s whole wheat sandwich thin with some White Chocolate Wonderful peanut butter, and the other half with a mix of pumpkin + pumpkin butter + cinnamon. It was deeeeLISH. 😛


I also rocked a killer Asian pear with breakfast. These pears are just fantastic. No doubt about it.


And of course some joe-to-go! 😉




Ohhhh blueberries, how I’ve missed you so!


A typical Monday Tuesday(?) Usual, plus an unphotographed honey graham Clif Z Bar.


PLUS, a little slice of heaven…aka, sweet potato chocolate chip bread. I’ve really gotta try to get my hands on this recipe!! 😯



After getting home from work and errands, my miserable mood left me wanting a dinner with as little fuss as possible. Thank goodness for leftovers!!


Tonight I had 1-1/2 slices of my leftover pizza from last night’s get-together.

I now have a new-found love for fresh spinach + eggplant on my pizza.


And let’s not forget my affinity for goat cheese pizza now too. Can you see where I picked off my olives?? 😉


Thankfully, the combination of pizza + chatting with the hubby + watching the Food Network helped lift my spirits.

This guy did a pretty good job, too. 🙂


I’m thinking some chocolate is going to be needed in my future…time to go hunt some down before One Tree Hill starts!

An “Udderly” Important Message!

We’re one step closer…


The lighting and electrical is finished!!! 😀 The boys worked really hard last night and were able to get everything accomplished that they wanted. Tonight, Jay had another friend of his over to start looking at some changes with heating that need to be made. We gotta start workin’ QUICK: we just got word that the cabinets are being shipped tomorrow! 😯

Thank goodness, because it’s getting pretty difficult to find decent places to take photos…


After a fabulous strength workout, courtesy of Jackie Warner’s 40 Minute Total Body Power Circuit on Exercise on Demand, it was time to enjoy some breakfast. Actually, it’s more like a snack, but I was really craving peanut butter and since I can’t bring it to school (ohhh the horrors!) I squeezed a little bit in before I left.


The other half of my banana was enjoyed once I got to work in a fabulous yogurt bowl:


A pineapple flavored Chobani + diced fresh pineapple + 1/2 sliced banana + granola


It was a nice change of pace in the flavor department! 😛


I needed something different in today’s lunch. I didn’t feel like packing up any leftover soup, and I couldn’t have another yogurt. So I rummaged through the fridge and came up with a little tortilla concoction:


My apologies, please. I realized once uploading this photo that it pretty much looks like barf. Ooooof. 😳

I promise though…it didn’t taste like barf! 😉 Using a LaTortilla Factory wrap, I spread the inside with a wedge of The Laughing Cow Light Blue Cheese + some Garlic Eggplant Spread. It was a smooth, creamy, subtly spicy combo that was “utterly” scrumptious (pun definitely intended). 😉

Oh yeah…here’s more of today’s mid-day meal.



While scrounging through our boxes of food for something to make for dinner, I came across a can tuna.

Okay, I can do something with this!”


I went ahead and made a tuna salad medley of sorts, using anything in the fridge I could find that could possibly coordinate:

  • celery
  • red onion
  • pickles
  • carrots
  • Vidalia onion relish
  • light mayo (1-1/2 tbsp?)
  • salt, pepper, & garlic powder

I used about 2/3 of the tuna salad on top of an Arnold’s Whole Wheat Sandwich Thin + a slice of reduced fat provolone.


Well it certainly worked! This salad turned out flippin’ fantastic; slightly sweet from the Vidalia onion relish, just enough creaminess from the mayo…Mmmmm. 😛

On the side I steamed up a head of broccoli that I found hiding in the back of the veggie drawer.


And I ate my dinner on the floor…because that’s how I roll. 😉


Tonight I’m planning on writing out some Christmas cards! ‘Tis the Season!! 😀

Since Jay and I moved in together (this will be our 3rd Christmas living together), we’ve always sent out traditional cards. I like being able to make them more personable. 🙂

Need To Use Up Those Leftovers?

Heyyy, would you look at that…a normal, healthy breakfast!


After a long weekend full of definitely “not-so-normal eating” (Hello Thanksgiving + Stomach Flu) a healthy, hearty breakfast was more than welcomed! In today’s oatmeal mash:

  • 1/3 cup oats
  • 1/3 cup vanilla almond milk
  • 1/4 cup water
  • 1/2 mashed banana
  • raisins
  • cinnamon + nutmeg
  • Toppings: 1/2 leftover Cranberry Apple Bread + granola

Yummmmm. 😛


I brought my goods with me to work and heated them up there, since I was running a little late this morning (Hey, it’s tough to get back into a schedule after 5 days!) 😯 I was also lucky enough to have this iced coffee waiting for me in the fridge that was leftover from yesterday.

I know, kinda weird…I’ll explain: I still couldn’t stomach coffee yesterday, and I had a coupon for a free one when I went to pick up our bagels. So I ordered it black and figured I’d just save it for today. It worked perfectly…there was even still ice in the cup! 😉



Lunchtime brought back another welcomed favorite…The Monday Usual! 😀

A plain flavored Chobani, mixed with a big ‘ol spoonful of pumpkin cream cheese + homemade pumpkin butter + 1/2 sliced banana + granola. Pure HEAVEN!

So believe it or not, these were the first veggies I’ve consumed since the green beans in my green bean casserole on Thanksgiving! 😯 Crazy, I know. They tasted fantastic; so did the pear…even though it may look a little less than fantastic.



After work, I had planned on coming home for a workout on the treadmill, but the body just didn’t quite feel ready for anything too intense. Rather than skip the exercise all together, I decided to flip on Exercise on Demand and did Jillian Michael’s Yoga Meltdown video. It had me workin’ up a sweat, and was exactly what I needed. Hopefully by tomorrow I’ll be back to 100%. 🙂


Believe it or not, I tackled the “kitchen” again tonight to utilize the remaining leftover turkey in my fridge.

You guys like my ghetto “cutting board” here?


Yeah me even works double duty. The way I see it is: If I cut through and onto the counter top…WHO CARES?!? It’ll be gone soon enough! 😉


Finding all the ingredients I needed actually wasn’t as difficult as I thought. And when it came to adding the pasta, I had this little guy staring up at me right from the top of the box. Thank you Healthy Living Summit swag bag!

Turkey & Veggie Soup


(I actually originally posted this recipe within the first week of starting the blog…I had no idea it was that long ago??)

If you’re still trying to figure out what to do with YOUR turkey leftovers, this recipe does not disappoint!


Along with our soup, I cooked up a can of reduced-fat crescent rolls that I’ve had sitting in my fridge. (Crescent rolls = No extra prep = Super!)


To “jazz ‘em up” I sprinkled them all with a bit of garlic powder, but I also filled a couple with shredded cheese, and a couple with onion powder + dill weed. They were perfect for dunking. 🙂


All enjoyed by the Christmas tree. 🙂


Now it’s time to go pack up the rest of the soup (YAY for lunch leftovers tomorrow!) and catch up on some laundry. Hope you’ve all had a great day back to “normalcy!”

Brain Farts, Indecision, & Christmas Tunes

You like that title?? 😉

Knowing that at 3:00 today I’d be on vacation for five days was definitely a good enough motivator to pop right outta bed this morning!

I started off my “Pseudo Friday” with a glorious 4-mile run on the treadmill. Had it not been for time constraints, I probably would have kept on truckin’ along, but unfortunately, life was awaiting. 😉

And so was this fantastic breakfast…


It was OIAJ time! 😀 Today’s theme? Cranberries!

  • 1/3 cup oats
  • 1/3 cup vanilla almond milk
  • 1/3 cup water
  • 1/2 mashed banana
  • cinnamon & nutmeg
  • 1/3 cup fresh cranberries (I added them right from the get-go, in order to get them soft…they turned out perfect!)
  • Toppings: small slice of Cranberry Apple Bread + granola


Now I don’t know…maybe it was my over-excitement for my upcoming vacay, maybe it was the fact that I was trying to do fifty things at once this morning, or maybe it was just a classic brain fart…but somehow, the fact that “hot foods should not be put into a plastic peanut butter jar” seemed to slip my mind.


Oops. 😳


I quickly transferred it over to another bowl…right after snapping photos of course.



The other night while waiting for what seemed like hours in the line for the deli, I happened to notice the soup station at my grocery store. They had a Garden Vegetable which smelled and looked delicious, so I decided to grab a small cup of it for sometime during the week.


Well, today was that day! I LOVED this soup! It was thick and chunky, and definitely FULL of a variety of delicious veggies. The only thing that could have made it any better? A Mastroianni roll. Oh well would you look at that…I just happened to have one of those. 😉


Mastroianni bread & rolls are probably one of my favorite local bread bakers. Their products are always so incredibly fresh, soft, and chewy. Jay and I really can’t be trusted around them very much; I try not to buy them too often for this reason, but they’re nice for a treat every now and then.


I actually decided to pass on my afternoon apple, after I was presented with THIS:


C’mon, which one would YOU choose? 😉 Being the day before Thanksgiving, there were a number of celebrations happening in school today. I’m so glad I got to celebrate with this one!


I was so incredibly indecisive for dinner tonight, it was terrible. After watching the Food Network for over an hour, of course all I really wanted was something that either Paula Deen or Rachel Ray was going to make me. Unfortunately, that wasn’t really an option this evening, so I ended up with a little combo plate.


Honey Sesame Kashi crackers + Champagne cheese slices + Eggplant Garlic spread + celery.


The celery also ended up getting a little hommus action too. 🙂


It was good, but nothing great. Ahh well, we can’t always have fabulous meals, right?

So when it comes to Christmas music, in the past I’ve usually tried to prevent myself from listening until the day after Thanksgiving. I don’t know; something about enjoying Thanksgiving FIRST always seemed appropriate.

THIS year, however, I caved fairly early and have been listening to a couple songs every morning on my way into work. What can I say…they always put me in a good mood! TODAY, I caved one step further and broke out one of my favorite Christmas CD’s:


I absolutely LOVE my Mariah Carey Merry Christmas CD! It actually has my #1 song – All I Want For Christmas Is You.

I’ve been known to belt out this tune for Jay while riding in very small vehicles – he has nowhere to escape, and I miss each and every one of her notes beautifully. 😉

So I got to thinking, and if I had to name my Top 5 Christmas Songs, I think they’d have to be this:
