Fun Demolition Discoveries

This morning while eating my breakfast, I couldn’t help but shake the feeling that someone had their eyes on me… 😉

I put together quite a delish bowl of oats today! Before leaving the house, I put together my base:

  • 1/3 cup oats
  • 1/3 cup skim milk
  • 1/4 cup water
  • 1/2 mashed banana
  • raisins
  • cinnamon & nutmeg

Once I got to school, however, I ended up stumbling across some of the leftovers from our faculty breakfast yesterday morning…SCORE!

So half a piece of some sort of cinnamon apple bread was promptly crumbled on top. Best stumbling EVER. 😉

Lunch was pretty much a repeat of what you guys saw on Monday, so I didn’t bother with any photos. But I did also have one of these…

So last night, some serious kitchen demo was happenin’ up in this place. In the process of tearing things apart, check out the old school coupons we came across!

I don’t know why, but I am always so fascinated by things like this that were from back in the day. Can you imagine clipping a coupon for 10¢ nowadays?? 😯

Well, the coupons ended up being found behind this big ‘ol hunka remaining cabinets…

Which are officially “no longer” and we are now left with no cabinets

…which also means no sink.

Which is why tonight’s dinner looked like this:

Yes, I finally had my first trip to Chipotle! No more Chipotle virgin here. 😉

I chose the Burrito Bowl (all the burrito fix-ins, minus the tortilla) which I ordered with their cilantro-lime rice, black beans, adobo-marinated and grilled chicken, fajita vegetables, lettuce, and salsa.

And as per hubby’s strong recommendations, I got us a side of chips + guacamole + mild salsa.

Now you guys probably already know that I am not a spicy kinda gal. Mild all the way, no extra heat, please! Well I’ll tell ya, I got a little nervous after the first bite into my burrito bowl…

YOWSAHS that chicken was spicy! 😯

I needed something to tame down the heat, so I grabbed some plain Chobani and dolloped it on there, sour cream-style. Problem solved…deliciousness accomplished. 🙂

I’m definitely now a fan of Chipotle, and lucky for me, I have a little less than half of this bowl left for lunch tomorrow! Saweeeeet. 😛

Who Wants Oreo Truffles??

Hubby and I have BIG plans tonight! 😯

I can’t even begin to tell you how excited I am

It’s gonna be a roarin’ good time, oh yes it is.

Tonight, we are ripping up the kitchen floor…

So while I may not be excited about the labor ahead of me tonight, I definitely AM excited to be one step closer. We’re getting there!

So, most of today’s eats weren’t all that exciting…

In case you’re wondering, that’s a 1/2 of a container of V8 Golden Butternut Squash Soup + leftover roasted zucchini; I took the picture before I heated it up, hence the unappealing, chunkiness. I must say, I’m really a fan of this soup! I’ve had it before, and it’s quite good.

I did say “most” were unexciting…not all. Enter, Exhibit C. 😉

So since I don’t have much left to offer on the meals front, I figured it would only be fair to share a recipe tonight!

During my first Christmas Cookie Baking extravaganza this year, my mom and I were sure to whip up another family favorite:

Oreo Truffles

These truffles taste so incredibly decadent, people hardly believe when I tell them that there’s only 3 ingredients! 😯 I don’t think I’ve ever brought these anywhere where they weren’t a hit!

Start by chopping up an entire package of Oreos. After dividing the Oreos, simply mix one part of them with a block of cream cheese.

It will take a little while to get everything totally incorporated, but don’t sweat it. Think of it as a mini-workout…or as an excuse for that extra piece you just snagged out of the bowl. 😉

Roll your mixture into balls and allow to chill in fridge for about one hour.

Once the balls are chilled, melt your chocolate and start dippin’!

Right after the balls are dipped into the chocolate comes the fun part:

It’s time to roll them in MORE Oreos!

And after giving them a little more time to chill and the chocolate to harden, you’ve got yourself a big ‘ol batch of decadent, delicious Oreo Truffles.

While I’ve only ever tried using regular Oreos, I’d be rather interested to see someone try experimenting with the other flavors that are available…

Strawberry Milkshake Oreos??

Have fun with this one…they’re pretty stinkin’ amazing! 😀

Oreo Truffles

Ingredients:

  • 1- 8 oz. block cream cheese (I use 1/3 less fat)
  • 1 package Oreos, finely crushed
  • 2 pkg. (8 squares each) semi-sweet chocolate, melted**

Directions:

Crush 13 Oreo cookies from package and set aside.

Crush remaining Oreo cookies and mix with cream cheese until well blended.

Shape into approx. 48 (1-inch) balls. Chill for 1/2 – 1 hour.

Dip balls in melted chocolate; place on waxed paper-covered baking sheet. Roll in reserved cookie crumbs.

Refrigerate 1 hour or until firm. Store in tightly covered container in refrigerator. ENJOY! 🙂

**I melt my chocolate on the stovetop, using a double boiler. I find it works easiest this way and the chocolate remains easy to work with.

Baby, It’s COLD In Here…Where’s Our Door?

Well I’ll tell ya…it’s certainly a little more than surprising to come home after a long day of work + a killer BodyPump class to find your house looking like this:

Yes, our house really is wide open right now as the wind blows, and flurries fall, and the temp is hovering around 22 degrees. I don’t know how these guys do it, but either way, I’m so incredibly thankful that they do! Our friends Erik & Josh were kind enough to take the time out of their super busy schedules to come and help us out. I really can’t thank them enough…it is an absolutely enormous help. Thanks, guys! 😀

So to say there’s a little “nip in the air” in the house right now would really be an understatement. It’s downright frigid. 😯

But hey, I’m not complaining!

How can I? The door replacement will be done tonight and that just means we’re one step closer to getting this kitchen finished!! We’ll just say I’m nicely bundled up right now as Cody and I sit here closed off in our office to try to stay warm. 🙂

Aaaand, we even have an almost-full (but not yet finished) ceiling now. Can I get a WOOT WOOT?!?!

So as I sit here bundled up in my office, listening to the hammers and nail guns, and incessantly wiping my cold, runny nose, I can’t help but be thankful for the microwave which is also keeping me company. It worked out quite well for re-heating today’s lunch leftovers for dinner. 🙂

A couple of us decided to order out for lunch today at work since it was a “No Students” day. This meant we actually had a full hour to eat (<—insert angels singing “Ahhhhhhh” here) – I almost didn’t know what to do with my extra 45 minutes?!?

I ordered the Pasta Fagioli lunch special, which was undoubtedly the best pasta fagioli I’ve ever had. Plus it came with garlic bread. It was heaven…for only $6.75. 😉

So today has been a little bit of a whirlwind of a day, and a hate to admit it but…

I’m totally rockin’ the “Debbie Downer” attitude tonight. 😳

To start, the stress of the kitchen remodel is really starting to take a toll on Jay and I. We certainly didn’t expect it to be easy, but after a few unexpected discoveries…which lead to a few unexpected expenses…I guess we’re just plain frustrated. We’re ready for the work to be done, we’re ready to stop eating off plastic plates, and we’re ready to have our kitchen back to one room (rather than being dispersed throughout the entire house).

As if the kitchen woes weren’t already enough, I also found out some discouraging news earlier in the day which put a pretty good damper on my mood. Hmmph. 🙄

But hey, I guess I’m just having “one of those days.” We’re all entitled to ‘em, right? Now that I’ve gotten that off of my chest, I can already feel a little weight lifting…

So let’s not dwell on the negative; let’s focus on some positives – like FOOD. 😉

Today’s breakfast came in the fabulous form of a peanut butter + pumpkin sandwich.

I topped half of an Arnold’s whole wheat sandwich thin with some White Chocolate Wonderful peanut butter, and the other half with a mix of pumpkin + pumpkin butter + cinnamon. It was deeeeLISH. 😛

I also rocked a killer Asian pear with breakfast. These pears are just fantastic. No doubt about it.

Dinner

After getting home from work and errands, my miserable mood left me wanting a dinner with as little fuss as possible. Thank goodness for leftovers!!

Tonight I had 1-1/2 slices of my leftover pizza from last night’s get-together.

I now have a new-found love for fresh spinach + eggplant on my pizza.

And let’s not forget my affinity for goat cheese pizza now too. Can you see where I picked off my olives?? 😉

Thankfully, the combination of pizza + chatting with the hubby + watching the Food Network helped lift my spirits.

An “Udderly” Important Message!

We’re one step closer…

The lighting and electrical is finished!!! 😀 The boys worked really hard last night and were able to get everything accomplished that they wanted. Tonight, Jay had another friend of his over to start looking at some changes with heating that need to be made. We gotta start workin’ QUICK: we just got word that the cabinets are being shipped tomorrow! 😯

Thank goodness, because it’s getting pretty difficult to find decent places to take photos…

After a fabulous strength workout, courtesy of Jackie Warner’s 40 Minute Total Body Power Circuit on Exercise on Demand, it was time to enjoy some breakfast. Actually, it’s more like a snack, but I was really craving peanut butter and since I can’t bring it to school (ohhh the horrors!) I squeezed a little bit in before I left.

The other half of my banana was enjoyed once I got to work in a fabulous yogurt bowl:

A pineapple flavored Chobani + diced fresh pineapple + 1/2 sliced banana + granola

It was a nice change of pace in the flavor department! 😛

Lunch

I needed something different in today’s lunch. I didn’t feel like packing up any leftover soup, and I couldn’t have another yogurt. So I rummaged through the fridge and came up with a little tortilla concoction:

My apologies, please. I realized once uploading this photo that it pretty much looks like barf. Ooooof. 😳

I promise though…it didn’t taste like barf! 😉 Using a LaTortilla Factory wrap, I spread the inside with a wedge of The Laughing Cow Light Blue Cheese + some Garlic Eggplant Spread. It was a smooth, creamy, subtly spicy combo that was “utterly” scrumptious (pun definitely intended). 😉

Oh yeah…here’s more of today’s mid-day meal.

Dinner

While scrounging through our boxes of food for something to make for dinner, I came across a can tuna.

Okay, I can do something with this!”

I went ahead and made a tuna salad medley of sorts, using anything in the fridge I could find that could possibly coordinate:

  • celery
  • red onion
  • pickles
  • carrots
  • Vidalia onion relish
  • light mayo (1-1/2 tbsp?)
  • salt, pepper, & garlic powder

I used about 2/3 of the tuna salad on top of an Arnold’s Whole Wheat Sandwich Thin + a slice of reduced fat provolone.

Well it certainly worked! This salad turned out flippin’ fantastic; slightly sweet from the Vidalia onion relish, just enough creaminess from the mayo…Mmmmm. 😛

On the side I steamed up a head of broccoli that I found hiding in the back of the veggie drawer.

And I ate my dinner on the floor…because that’s how I roll. 😉

Since Jay and I moved in together (this will be our 3rd Christmas living together), we’ve always sent out traditional cards. I like being able to make them more personable. 🙂

The Good, The Bad, & A Kitchen Update

Good News: Jay and I are back on the mend and almost feeling “normal” again today. 🙂

Bad News: The stomach bug has run rampant amongst my family…now my brother, Mom, Dad, and grandma have it. 😳

Turns out, my one grandma was apparently sick with it during the week and must have still had it lingering when we saw her on Thanksgiving. This bug is no joke! It completely wiped us out…I don’t think I’ve slept so much in months. Luckily, it appears to only be a 24-48 hour pain in neck…or tummy, to be exact. 😉

Seeing as though I was cramped up in the house all day yesterday, I was craving some fresh air! So I offered to go out and pick up some bagels for breakfast. (I’m still craving nothing but carbs.)

I had a cinnamon raisin bagel, topped with some peanut butter & banana. It was incredibly delicious. I savored every.last.bite. Ahhh, to be able to enjoy food again! I’m still also downing ginger ale like it’s my job. 😉

Even though the stomach is better, I’m still lacking in the energy department, so much of my day has been spent relaxing on the couch and watching “In The Kitchen” on QVC. There’s some really fun stuff on here…I’ve had to restrain myself from grabbing the credit card a few times. 😯

Jay, on the other hand, has gotten back to work in the kitchen:

He was planning on doing a lot of the electrical yesterday, so we’re a little behind schedule.

On Friday afternoon, Jay and I set out to window shop for some appliances that we’ll be needing…well, “window shopping” turned into “actual shopping” thanks to some great deals!

We got a new over-the-stove microwave (no, it didn’t cost $749…that’s the price of the stove below) 😉

A dishwasher(!!!!!!!) <—The most exciting appliance yet…since the “dishwasher” in this house has pretty much been ME.

And new flooring! We got an incredible deal at Lowe’s, where it was about half the price of the other flooring we had been looking at. SCORE! 😀

Now that we have the internet turned back on in the house, I think it’s time to do a little online Christmas shopping!!

He’s Pretty Handy To Have Around

I puttered around the house for a bit before deciding to hop on the treadmill for a workout. I completed 4 miles in just under 40 minutes, and then walked the last mile while watching “Man on Fire” on FX.

I’m a Denzel fan, so it made the 5 mile run/walk that much more enjoyable! 😉

I didn’t take pics of all my eats today, but I did snap a few of my delicious, post-workout yogurt bowl:
