Fun Demolition Discoveries

This morning while eating my breakfast, I couldn’t help but shake the feeling that someone had their eyes on me… 😉

I put together quite a delish bowl of oats today! Before leaving the house, I put together my base:

  • 1/3 cup oats
  • 1/3 cup skim milk
  • 1/4 cup water
  • 1/2 mashed banana
  • raisins
  • cinnamon & nutmeg

Once I got to school, however, I ended up stumbling across some of the leftovers from our faculty breakfast yesterday morning…SCORE!

So half a piece of some sort of cinnamon apple bread was promptly crumbled on top. Best stumbling EVER. 😉

Lunch was pretty much a repeat of what you guys saw on Monday, so I didn’t bother with any photos. But I did also have one of these…

So last night, some serious kitchen demo was happenin’ up in this place. In the process of tearing things apart, check out the old school coupons we came across!

I don’t know why, but I am always so fascinated by things like this that were from back in the day. Can you imagine clipping a coupon for 10¢ nowadays?? 😯

Well, the coupons ended up being found behind this big ‘ol hunka remaining cabinets…

Which is why tonight’s dinner looked like this:

Yes, I finally had my first trip to Chipotle! No more Chipotle virgin here. 😉

I chose the Burrito Bowl (all the burrito fix-ins, minus the tortilla) which I ordered with their cilantro-lime rice, black beans, adobo-marinated and grilled chicken, fajita vegetables, lettuce, and salsa.

And as per hubby’s strong recommendations, I got us a side of chips + guacamole + mild salsa.

Now you guys probably already know that I am not a spicy kinda gal. Mild all the way, no extra heat, please! Well I’ll tell ya, I got a little nervous after the first bite into my burrito bowl…

I needed something to tame down the heat, so I grabbed some plain Chobani and dolloped it on there, sour cream-style. Problem solved…deliciousness accomplished. 🙂

I’m definitely now a fan of Chipotle, and lucky for me, I have a little less than half of this bowl left for lunch tomorrow! Saweeeeet. 😛

How I Beat Boredom On The Treadmill

Thanks to some tummy troubles, my appetite has been a little off today. 😳 I’m pretty sure I probably have my super-duper sugar intake as of late, plus the joys of being a lady to thank for today’s discomfort. Ahh well…life goes on!

I started things off with a little cereal combo: Quaker Oatmeal Squares + Fantastically Festive me & goji mix + skim milk.

Along with my cereal & mug-o-joe, I also brought a perfectly ripe banana, which I snacked on mid-morning.

By the time lunch rolled around, I really didn’t have too much of an appetite, yet I could feel my stomach grumbling…does anyone else ever get that feeling? It’s a weird one!

An always delicious pineapple flavored Chobani, topped with some Kashi Heart to Heart + granola

Carrot sticks, red peppers, & grape tomatoes…all of which are on their last leg. 😯

By the time I got home from work, all I really wanted to do was curl up on the couch in a ball while watching TV. However, something was telling me that I should really try to get moving. I weighed the pros and cons of skipping the workout, and of course, the cons totally outweighed the pros…it was a simple case of me just being lazy. 🙄

So I threw on the workout clothes, grabbed my iPod, and hopped onto the treadmill. I wasn’t feelin’ any HIIT workouts today, so I decided to just go for a steady, 3-mile run.

Now, steady for me is never one set speed. No matter what, I just cannot run at one speed. Even if it’s just a matter of varying the speeds from 6.0 – 7.5, I still have to do it. Here’s an example, which is what I did today:

I was definitely glad that I got up and moving, because it helped a little with the tummy troubles and eventually got my appetite nice and ready for dinner. On the menu tonight?

Turkey & Cheese Panini!

I first coated the bread slices with some Eggplant Garlic Spread, and then topped it off with deli turkey and some fontina cheese that I picked up at the grocery store this weekend.

I’d never bought fontina cheese before, but I can certainly say this will not be the last time! Fontina is absolutely perfect for melting on panini sandwiches…just look at that oozing cheese! 😛

It’s Time To Celebrate…With The COB!

Tonight was another special dinner for the family! Instead of some good ‘ol home cooking, the fam decided to meet up at one of out favorite local pizza places, The Redfront.

The Redfront has one of the most delicious pizzas around, but it’s definitely quite unique compared to all of its local competitors. The pizza of choice for my whole family is the COB Pizza:

Sliced cheese on bottom (hence the COB), with tomato sauce on top. One of our pizzas, as always, was ordered with peppers & onions.

Rockin’ Out & Wrapping Gifts

Wow, it’s been a while since I gave you guys a full recap on the day’s eats, hasn’t it? Boy oh boy, where does the time go??? 😯

Alright, well let’s get this post started!

First up: today’s yumm-o breakfast; nothin’ new, but certainly a favorite of mine!

I combined a container of vanilla Chobani with 1/2 a sliced banana + about 1/2 cup blueberries + a sprinkling of cinnamon.

It’s another case of “hairy berries!” 😉

Once I got to work, I mixed everything all together with some Kashi Heart to Heart cereal + a little granola.

I ❤ yogurt messes. 😀

Today’s coffee had to be enjoyed out of a regular mug, which I must say, I REALLY enjoyed! I don’t know, call me crazy, but it just felt so much “cozier” to enjoy my coffee at work out of a regular mug, rather than my travel mug?

Oh, and in case you’re wondering…coffee was enjoyed out of the travel mug because I happened to drive away yesterday morning with the full coffee mug still on the roof. 🙄 Needless to say, I think it may be busted. 😳

Lunch

I was totally rushing to leave the house for work today, but this spectacular reason was sooooo worth it:

I’ve really been lacking in the veggie department, and actually woke up craving a nice fresh veggie salad for lunch today. So I mixed up anything I could find in our veggie drawer: romaine, grape tomatoes, carrots, pickles, red peppers, and corn.

I drizzled my salad with a little salad crack Newman’s Own Light Balsamic.

and a little later, finished off the rest of my Popcorn Indiana Chip’Ins. Definitely gonna need to go get more of these babies…they’re fantastic!!

Workout

My original plan for today was to hit up the gym after work for a little BodyPump, but after analyzing my “To-Do” list, I realized I’d be better off to just head home and do a workout there. Thanks to my trusty Exercise on Demand, I sweated it out (sorta) with a little Yoga Meltdown with my gal pal Jillian. 😉 No idea why, but today’s workout seemed super intense?!? It’s ok…I love feelin’ the burrrrrrn. 😉

Dinner

A random mix of sorts, but I was on my own so I just went with the first thing that came to mind: chicken sausage!

Since we don’t have any rolls conducive to chicken sausages, I decided to slice up my link and place it on a whole Arnold’s Sandwich Thin.

I then topped the other half with a slice of provolone cheese, plopped ‘em back on the stove top, and let ‘em get toasty and melty. Yummmm. 😛

On the side, I roasted up some zucchinis with a little non-stick cooking spray, garlic powder, onion powder, salt, pepper, & oregano. They were actually a tid-bit spicy. 😯

Now I’m in the process of doing up some laundry, rockin’ out to Christmas tunes on Pandora, and wrapping up some Christmas presents. I’ve got a Blogger Holiday Gift Exchange gift to send out tomorrow……

23 Years Ago…

Man, I am a lucky girl! I got to have another delicious, home-cooked meal tonight, courtesy of mi Madre!

Tonight’s dinner wasn’t just any dinner though…today is actually a very important day for somebody special in my life! :mrgreen:

It’s my brother’s BIRTHDAY!!!

I can’t believe my “little” brother is 23 years old today?!? 😯

I’ll admit…23 years ago when this guy came into my life, I wasn’t always super excited about having a younger brother. It would annoy the crap out of me when he’d do things like mess up all my Precious Places, tattle on me with any and everything he could think of, and try to spy on me when my friends were over.

Oh, and let’s not forget all the attention he stole once he showed off his cute, chubby face. 🙄 I’d pick on him pretty bad, always saying it was ok because he was “smaller than me.” My parents warned me…he wasn’t always going to be smaller!

But then it was time for the “little guy” to start Kindergarten, so I guess you could say my “Big Sister” instincts started to kick in and he became a little less of a pain. That’s not to say there still weren’t days where I would have been happy to trade him away for a few extra Lisa Frank folders. 😉

As we grew older, I think it’s safe to say we went through some “Love/Hate” times, which is nothing out of the ordinary for siblings. My parents were right – he definitely wasn’t “smaller” anymore. But once we were both finished with high school, I’d say we really started to become close.

My Nasoya Wrappy Hour Party + 3 Recipes!

I think I may just have a new favorite food to play with! 😀

Tonight, I headed on over to Mom & Dad’s house, goodies in tow, so I could host my Nasoya Wrappy Hour party. I was so grateful that they let me host over at their place, since…well…we all know what my place looks like. 😯

So Mom & I got right to work on the goods while sporting our snazzy Wrappy Hour aprons. Nice, right?

Although I had about fifty different ideas for recipes to make tonight, I knew I had to take it easy since it was only the five of us to eat everything. Mom put together one of the recipes, while I tackled the other.

Using Nasoya’s Won Ton wraps, I was able to create three delicious, crowd-pleasing recipes!

Chicken Wonton Pockets (see recipe below)

I started off by enjoying two spinach ravioli + 2 chicken wonton pockets. Both of them were so tasty that I had to go back for one more of each!

Even though it doesn’t look like a whole lot of food, it was actually quite filling and very satisfying. I could definitely foresee making any of these recipes again; but I’m also just as excited to try something new with these won ton wrappers too. 😯

Now I’m headed in to relax on the couch with my favorite boys…and I may have to break out a Christmas Cookie from my stash. 😉

Spinach Ravioli

(recipe from Nasoya)

Ingredients:

  • 1 pkg Nasoya Won Ton Wraps
  • 10 oz fresh spinach
  • 2- 15 oz containers ricotta cheese
  • 3/4 cup grated Pecorino Romano cheese
  • 1 tsp salt
  • 1/2 tsp ground black pepper

Preparation Method: Cook spinach with 2 tbsp of water in the microwave or on the stovetop for 5 minutes or until just wilted. Let cool and drain excess water. Place tofu in food processor and pulse until it is pureed. Add the ricotta cheese, pulse until combined, then add spinach and grated cheese and process until smooth, about 30 seconds. Season with salt and pepper.

Line baking sheet with parchment paper, or spray sheet with non-stick cooking spray. Take a wrap and place approximately 2 tbsp of mixture in the center if each wrap. Do not place filling near the edge. Use a pastry brush dipped in water and brush edges of wrap. Place a second wrap on top, then crimp edges together tightly with your fingers or the tines of a fork. Brush ravioli lightly with olive oil.

Bake in 375° F oven for 10-12 minutes or until lightly browned. Serve ravioli with your favorite marinara sauce for dipping.

 

Cheese Ravioli

Ingredients:

  • 1 cup ricotta cheese
  • 1 egg
  • 2 tbsp. grated Romano cheese
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1 tbsp. parsley

Mix all ingredients until combined.

Line baking sheet with parchment paper, or spray sheet with non-stick cooking spray. Take a wrap and place approximately 2 tbsp of mixture in the center if each wrap. Do not place filling near the edge. Use a pastry brush dipped in water and brush edges of wrap. Place a second wrap on top, then crimp edges together tightly with your fingers or the tines of a fork. Brush ravioli lightly with olive oil.

Bake in 375° F oven for 10-12 minutes or until lightly browned. Serve ravioli with your favorite marinara sauce for dipping.

 

Chicken Wonton Pockets

Ingredients:

  • 3 oz. cream cheese, softened
  • 6 tbsp butter, softened (divided)
  • 2 tbsp green onion, minced
  • 1/2 tsp lemon pepper seasoning
  • 1 large + 1 small can chunk chicken, drained
  • 1 pkg Nasoya Won Ton Wraps
  • 2/3 cup breadcrumbs

Directions:

Beat together cream cheese, 2 tbsp butter, green onion, and lemon pepper. Fold in chicken.

Place a rounded teaspoon in center of each wonton wrapper. Fold sides of wonton wrapper toward center. Moisten edges with water and roll up tightly.

When filled, brush wrappers with 4 tbsp melted butter (I only used about half of this) and roll in breadcrumbs.

Place on baking sheet sprayed with non-stick cooking spray. Bake in 425° F oven for 10 minutes. Turn and bake 5-10 additional minutes, or until lightly browned. Serve with duck sauce or marinara sauce.

Christmas Cookie Baking #2 & Some Girl Time

‘Twas two weeks before Christmas, when all through Mom’s kitchen,

Batches upon batches of cookies were bakin’! 😀

Mom and I definitely worked just as hard the second time around on our marathon cookie baking. We both accomplished double batches of Mexican Wedding Cookies,

and Christmas M&M Cookies. 😛

I actually used the same chocolate chip recipe that I use for my Chewy Chocolate Chip Heath Bar Cookies; I simply substituted M&M’s for Heath bars, and they turned out awesome!

Mom also made up another batch of cookies that absolutely knocked my socks off…

Once again, with cookie baking comes copious amounts of cookie eating. I did manage, however, to keep things somewhat under control and didn’t end up leaving in a sugar coma. YAY for small victories! 😉

Besides, I couldn’t load myself up too much, I had a dinner date with my favorite gals to get to!

We had a great time chatting, catching up, and just enjoying each others’ company. We don’t get to get together nearly as often as we’d like, so these meet-ups are always special. 🙂

But obviously that wasn’t happening. 😳 Grrrrr. I will tell you that it was a delicious mixed greens salad, topped with oven roasted pears, dried cranberries, almonds and a toasted brie crostini, served with a honey vinaigrette dressing (which I ordered on the side). It was super tasty, but for the amount of food, I’m not sure if it was quite worth the price. I was still hungry after!

But no worries; us ladies knew how to solve that…

I went with a favorite combo of cookie dough ice cream + caramel + brownie bites.

Well, here’s my secret:

Betty Crocker Cookie Icing

This icing is the easiest stuff to decorate with. All you need to do is outline the shape of your cookie, then just fill in about 85% of the middle. Eventually, the icing just fills in any gaps on its own. It’s amazing! 🙂

Today, Jay and I, along with our friends Joe & Kate, are packing up our rain gear and heading down to the JETS vs. Miami game!

Joe & Kate are Miami fans, while Jay and I (as you know) are total Jets fans, so it should make for a fun day. It would be nice, however, if it wasn’t expected to look like this all day…
