Wheatfields Bistro & Wine Bar

I just love girls night! 😀

Today, four of my best girlfriends and I met up for Happy Hour & dinner at a new restaurant for all of us, The Wheatfields Bistro & Wine Bar.  Wheatfields has been serving up fresh, homemade pasta since 1988, and has just recently opened up a new location, which was the Bistro & Wine Bar that we attended this evening.  As soon as I walked through the door, I liked what I saw!

My friend Joelle was waiting there when I got there, so we headed over to the bar to check out Happy Hour! 🙂

We were SO excited to see that Wheatfields offers 2 for 1 deals on wine and beer during their Happy Hour, Monday-Friday from 4-7 at the bar only.  I was in the mood for a glass of wine, so it worked out perfect!  At the recommendation of the bartender, I ended up choosing their house Pinot Grigio, which I don’t remember the name of!  EEK!  I wish I did because I really liked this stuff! I enjoyed my “2 for 1” throughout the course of the evening. 🙂

I obviously was parched, as you can see the lipstick mark on the glass before I even took a pic! 😉

Wheatfields also offers a complementary cheese & cracker display during their happy hour.

After sitting and chatting at the bar for a little while, we decided it was time to order some grub!  We started off by sharing an appetizer of Bruschetta, a blend of roma tomatoes, garlic, basil, red onion, extra virgin olive oil, & balsamic. 4 girls + 4 pieces = perfect! 😉  The bruschetta was quite yummy (but I almost enjoyed my “special toast” from yesterday better!) 😉

I was totally indecisive tonight when it came to ordering!  We were having such a good time chatting that I kept getting sidetracked!  So when our waiter came back, for what seemed like the 5th time, I had to make a game time decision.  I started off with their Market Salad, which was mixed greens, tomato, cucumber, red onion, and a citrus vinagrette. I ordered the dressing on the side, just to play it safe! 😉  It was a delicious dressing – a little sweet & a little tangy!

The table was also given a basket of fresh baked bread to share.  YAY bread! 😀

Served alongside the bread was an herb butter and a white bean hummus, both of which were equally scrumptious!  I had 2 pieces, just so I could make sure to try one of each topping. 🙂

At the last minute, I decided to order….PASTA!  Two big pasta dishes in one week is obviously not greatt, BUT I had been told by so many people that I just HAD to try their homemade pasta.  I ordered their handmade, whole wheat pasta with a vodka pink sauce.

The sauce had a little bit of a spice to it, which I wasn’t really expecting, but it was still really good.  Again, we were chatting so much and having such a great time, that I ended up only eating about half of this (maybe less?) because, for once, I gave my brain enough time to signal that I was full and satisfied.  How ’bout that? 🙂

Dinner with the girls was such a great time!  I wish we were able to do it more often!  Thanks Eileen, Jo, & Rach for a great time!! 😀 (p.s. – we missed you Kat!)

It was brought to my attention earlier today after reading Tina’s post, that today is in fact National Oatmeal Cookie Day!  How did I not know this?!? Well, seeing as though oatmeal raisin cookies are my FAVORITE, and it is National Oatmeal Cookie Day, I had to have a little celebration…

This baby hit the spot! 🙂  But hey, how could it not?  It’s an oatmeal raisin cookie! 😀

I could have celebrated with this, times 5! 😉

The rest of my Friday is going to spent relaxing with the hubby, who has already thoroughly enjoyed my leftover pasta and the chocolate chunk cookie I brought home for him.  Tomorrow morning, my friend Kate and I are headed out to the Farmer’s Market – it’s the first week of the season that it’s back outside, and it’s supposed to be GORGEOUS out tomorrow! YAY! 8)

I love the exact setting as tonight…a couple drinks, some dinner, and enough time to chat and enjoy each others’ company! (But of course the occasional “night out on the town” is always a blast too!) 😉

Outside My Box

First things first, here’s a quick peek at my “Coffee Friday” brew. 🙂  Today I tried the new “Dark Roast” blend that DD’s has been advertising.  It was yummy, but I really didn’t notice much of a difference?  Has anyone else tried the new Dark Roast yet?  What did you think?

Ok, on to lunch…I was really on top of my game last night when I was prepping for today’s lunch.  I wasn’t in the mood for my “norm” and felt like going a little “outside the box” so to speak!  Thanks again to Julie for the inspiration to create this delish combo! 😉

First I started out with some fresh spinach and broccoli that I steamed in the micro for about a minute.  I also added some edamame that I cooked up last night too. YUM.

Then I topped that off with some Newman’s Own Marinara.  This stuff is REALLY good!  And I love the Newman’s Own brand too 😀  I also added in a dollop of ricotta cheese, which was the main reason for having this meal!  I bought some ricotta at the store over the weekend and had yet to use it!

On top of my red & white, I heated up the last of my Boca burgers.  This kind is definitely my favorite of the boca burgers.  And WOW, did the flavors match perfectly for this dish! 🙂

I wasn’t sure how my taste buds would react to having something totally different at lunch time…but they were pleasantly happy! 🙂  I threw everything in the micro again for another minute to re-heat, and it was mmm-mmm GOOD. 😛

On the side, I also had some fresh cantaloupe & strawberries (again). 🙂

Today after work, I’m meeting up with a few of my girlfriends for Happy Hour & dinner.  I’m so psyched!  What a great way to end the work week, right?  I’m headed to a NEW restaurant too, which makes things even more exciting.  Now if I could only figure out what I want to order?!? 😉

Ok, so I need your help!  I now have a big tub of barely used ricotta sitting in the fridge and I have NO IDEA what I should do with it?!?  It’s soo good, and I don’t want it to go to waste!

Yogurt Mish Mash

I was all over the place with breakfast this morning!  I wanted creamy, then fruity, then crunchy…so I decided to just go with it and ended up with this bowl of goodness!

In today’s bowl ‘o goodies:

– 1 plain Chobani greek yogurt

– 5 sliced strawberries

– 1/4 Quaker Oatmeal Squares cereal

-2 tbsp. granola

– 1/2 crumbled Clif Z Bar

– Dallop of strawberry preserves

This bowl hit ALL of my cravings 😀 so hopefully it will stick with me for a while.

I swear, there is yogurt under there! See?

YAY for Fridays!  That means, it’s Coffee Friday too!  And it’s lookin’ like an iced coffee is on my radar 😉

It’s supposed to be a GORGEOUS day here! 8)  I really wish that I had the option to enjoy lunch outside at work, but there really isn’t anywhere to go!

Cheesy Tomato Pesto Toast

This afternoon, one of my students had a birthday!  So in true, celebratory fashion, she brought in a snack to share with the rest of the class.  And do you know what she brought in?  MIXED FRUIT!  I was SO impressed by this, it had me thinking about it all morning.  Growing up, I remember having all my friends’ birthday parties at school and you knew you were getting something GOOD – and by “good”, I mean loaded with sugar! 😛 Cookies, cupcakes, ice cream, you name it!  It was always a treat to celebrate a birthday!  But mixed fruit?  You NEVER saw that!  So hey, maybe there is hope for our youth!  You gotta reach ’em when they’re young! 🙂

Dinner tonight was quick and casual, since Jay is off bowling again tonight, and I was headed to a BodyPump class.  I wanted something that would fuel me up, but not leave me stuffed.  I’ve been craving the pesto that I bought ever since Saturday, and still hadn’t had any!  Until tonight that is 😉

First, I started off with a big slice of my multi-grain bread (this loaf is never-ending!) and topped it with a smear of Laughing Cow light Swiss cheese and some pesto!

Then, I topped each slice with a big hunk of tomato…

Followed with a drizzle of balsamic vinegar!

Then I took some part-skim mozzarella and sprinkled a teeny bit on top…Mmmmm!

All dressed up and ready to go, these beauties popped right under the broiler for about 3-4 minutes, until just a little golden.  Aaaand, VOILA! 😀

I’m totally gonna “toot my own horn” here, but this stuff almost tasted restaurant quality!  The flavors of the pesto and spreadable Swiss really came through nicely.  I’m definitely making this again…SOON! 😀  Along with my Cheesy, Tomato Pesto Toast (since I have nothing else snazzy to name it!) I had a side salad of romaine, shredded carrot, and red & green bell peppers, drizzled with a little more balsamic vinegar.

The salad = totally boring…but the toast TOTALLY made up for it!! 😀

So after dinner, I headed to BodyPump.  LOVED tonight’s class, because the instructor switched up some of the tracks with some older ones.  It’s always nice to keep things changing…it keeps me on my toes! 😉  Just in case you were interested, here’s my setup of weights & equipment that I use for each class.

There’s ONE last Creamsicle Soda Cupcake left, and I think I hear it calling my name!! 😛

A Lazy Lunch

I was so lazy when it came to lunch today!  What I was really craving was the awesome chicken sandwich that I made yesterday.  BUT, somebody wasn’t in the mood to make her lunch last night ahead of time, and then she ran out of time this morning. (Gee, I wonder who that could be?) 😉

Sooo, when all else fails, it’s back to basics!

I also tried this honey vanilla Yoplait greek yogurt.  I had a coupon to try a couple of these, so I picked some up this weekend.  My honest opinion – they’re not my favorite. 😦  This one had kind a weird, tangy flavored, and the consistency of it did not match the usual thick, creamy goodness of my usual Chobani’s.  Hey, everything’s worth a try once, right?  At least I had some granola to mix in to give it a little better flavor!

I also have a crispin apple with me for later in case I need something, which I got from the Farmer’s Market on Saturday.

I still can’t stop thinking about how DELICIOUS my smoothie was this morning!!  I want another one! 😉
