Just Call Me Butter…

…cuz I’m on a roll! (I know, I know, big cornball over here!) 🙄

It definitely has been a productive day, both outside AND in the kitchen. But I think I can honestly say that I really do not enjoy painting. 😳 Thankfully, Mal was here to help me, and I’d say we made a pretty good dent before we ran out of primer 3 hours later. It’s all the lattice work that is a total time killer. UGH!


So, onto more EXCITING news…I can’t believe that I totally forgot to mention this earlier this morning…

I bit the bullet and I’m doing the Warrior Dash!!!!

BUT, that’s not even the best part…Jay offered to do it with me! 😯 I can’t believe I was able to convince him – but I just reminded him that it will be a totally awesome experience that we will probably never do again. Plus, there’s those hats that I just love. 😉 Hopefully I’ll be feelin’ feisty on September 19th!


I wouldn’t have thought that any lunch creation I came up with could have topped today’s breakfast…but it surely held up as a strong contender!


Roasted Veggie & Wheatberry Salad

-1/2 cup cooked wheatberries

-3/4-1 cup roasted veggies (oh, how I love leftovers!)

-1 wedge The Laughing Cow Light Swiss Cheese

-drizzle of light balsamic vinaigrette dressing

-fresh basil leaves


To make the salad, I simply threw everything in a bowl, heated it in the microwave for about a minute, stirred everything up to get the cheese evenly distributed, and topped it with fresh torn basil leaves. Everything was ready in less than 5 minutes, start to finish, and it was totally delicious to boot! The flavors of the veggies have gotten even better as they sit, and the creaminess of the cheese throughout just brought the whole dish together perfectly.


Good thing I still have more leftover veggies! 😉


Tonight, Jay and I have a softball game, which means we’ll likely be cooking out afterwards. However, all my hard work today (yes, that’s right Jay, you here that? LOTS OF HARD WORK TODAY 😮 ) definitely got my appetite kicked up a notch.

To cure the tummy rumbles, I decided to make a new Green Monster: Strawberry Peach!


Strawberry Peach Green Monster

-1 chopped peach

-1/2-3/4 cup frozen strawberries

-1/2 cup vanilla almond milk

-1/2 scoop strawberry whey protein powder

-2 handfuls spinach

-1/4 tsp xanthan gum (for thickening purposes)

-1 ice cube


I definitely like this combo, and I’m thoroughly enjoying sipping on it while we speak. 🙂


We’re gonna be heading out the door in a few minutes for the game, so wish us luck!!

Last Night’s Recap

Good news: We won our softball game last night. :mrgreen:

Bad news: I came home, ate leftovers for dinner, and again went to bed feeling BLAH. Grrrrr…darn you stomach! 😡

We didn’t end up grilling after the game, so after hanging out for a bit, I came home and had some leftover Cheesy Chicken & Rice casserole. I was so hungry by the time I ate, I think that that may have been part of the culprit.

Usually I have an idea of what I want for breakfast by the time I wake up in the morning, but today was a tough decision! Should I skip dairy? Should I not eat gluten? Should I not care?

After navigating through the good ‘ol refrigerator, I saw the bag of fresh spinach I picked up the other day at the grocery store. Ahhhh, decision made. Any guesses?? 😉

Love A Stolen Moment

Nothin’ like a little trip down memory lane to start off this glorious Friday, right?? 😀

So I was not really feelin’ the workout mojo this morning, but I was able to dig down deep and crank out a pretty intense incline workout on the treadmill.  My glutes were a-burnin’! 😉 I plan on posting the workout in a little while under my “Workout Log” page, so you can feel free to check it out. I’ve also recently added a few of my other favorites.

With the holiday weekend approaching, I figured I’d start my “celebration mode” a little early with a nice, fancy, umbrella drink…

A tropical Green Monster, oh yes! 😎  (Although it actually had no tropical fruit whatsoever, but the umbrella alone gets my point across just fine!)

Today’s Monster included:

-1 frozen, sliced banana

-8 frozen strawberries

-1/2 cup vanilla almond milk

-1/2 scoop Strawberry Whey protein powder

-2 handfuls spinach

Along with my GM, I enjoyed another delicious VitaTop – today’s top: CranBran.

Just heated up in the micro for 30 seconds, and topped with a little obsession: Blizzard Butterrrrrr. :mrgreen:

Later this afternoon, Jay and I are headed out for a celebration “Date Night!” We’re actually going to be driving up to Lake George, NY – which if you’re not from around here, is a gorgeous place to visit in the summer time.  We’re going to stay the night, and enjoy some outlet shopping, a little wine tasting, and hopefully a delicious dinner along the lake. 😀

Revenge of the Green Monster

Boy, it sure is Monday today, huh?  My goodness it was NOT easy to get up this morning.  I hit my snooze button three times before finally getting up for my morning workout.  And even then, it was more of a roll out of bed & into my clothes, then flinging myself down the stairs onto the treadmill. 😉

Even when I first got on the treadmill, I was thinking, “Ahh, it’s still not too late to go back to bed for an extra 40 minutes…” but I told myself to just stick it out and see how it goes.  After 30 minutes, I had completed my Cardio Blast workout, which although was done a little easier today, still had me a sweaty mess. 😀  I’m so glad I stuck with it!  Especially after feeling the sluggish side effects of this weekend’s eats.

While I totally love to indulge in the occasional treat, (as you know!) this weekend’s wine, french fries, cookies, and ice cream, was all a little much, and left me feeling pretty BLAH. 😳  I’m definitely ready to balance it all out with some fresh fruit and veggies today!

With that being said, there was no question on what was going to be attempted for breakfast this morning…can you guess?  I think I even dreamed about it last night 😉


I was a little nervous when it came time to get the blender movin’…

I pushed the button and crossed my fingers….

And IT WORKED GREAT!!! Even better than the last blender! 😀 😀

Today’s monster included:

– 1/2 cup Almond Breeze vanilla almond milk (<– SO GOOD, by the way) 😉

– 1 scoop Chocolate protein powder

– 2 BIG handfuls fresh spinach

This monster was so sweet & creamy…I was in heaven!  It felt so good to have some fruit & veggies, too…I swear, I already feel healthier! 🙂

On The Go, Go, Go!

Yikes!  Sorry guys, between last night and this morning, I have been on the GO!  So let me give you a quick recap before I run out the door again…

I didn’t end up taking my BodyPump class yesterday after work as planned.  I ended up getting this wicked stomach ache that was putting me through a loop, so I decided to come home and rest.  It still wasn’t fully back to normal until this morning, so I don’t know what the deal was?  I didn’t eat anything different than normal?

Oh well…what matters is I’m 100% today, right? 😀

Before our softball game, I made a quick dinner but it was super delish!  I mixed together a can of tuna fish w/ about 1 tbsp. light mayo, diced carrots, onions, peppers, and pickles, about 3 tbsp. dried cranberries, some S&P, and then the secret ingredient…cinnamon!

I decided last minute that I wanted to try to give it a little unique “pizazz”, and it certainly did the trick.  I LOVE cinnamon, so I probably will not make tuna fish again without it 😉  If you’re not in love as much as I am, maybe just test out a little sprinkle on a bite next time…ya never know! 🙂

I put my tuna salad on top of a tiny bed of spinach, and sandwiched it all between a lightly toasted, whole wheat Arnold’s Sandwich Thin.

On the side, I also had some of these Sweet Potato Food Should Taste Good chips.  I LOVE these chips, but usually don’t keep them in the house because I have a hard time controlling my portions around these babies!

I REALLY wish I could find the Cinnamon flavored ones, but I am having no luck. 😦  Hopefully they’ll show up around here soon!  Dinner was enjoyed on my pretty new plate 😀

Unfortunately, we lost our softball game last night, but we still had a ton of fun!  We did a little “tailgating” afterward, which is exactly what I was looking forward to, so it was a fun night.  While we were tailgating, I ended up having a blueberry beer from the Blue Point Brewing Co. which I LOVE 😛  Here’s a picture of me & Dad from the game last night…Love Ya Big Guy! 😉

Now, THIS MORNING, I got up nice and early to squeeze in a workout.  I debated on skipping, but I knew that today had the potential to be a big day of eats, so I knew I’d feel better if I did something.  Since I didn’t make it to BodyPump yesterday, I decided to incorporate a little lifting this morning, so I ended up doing this 30 minute workout, which I tried a few weeks back.  It totally kicked my butt again this morning…loved it! 😉

We were QUICKLY out the door after my workout, because today we were helping Sarah & Jeff move into their NEW HOUSE!!  We’re SO excited for them. 😀

Before we left, I threw together a super fast Green Monster.  I didn’t even measure things today guys, sorry!  But it was more on the “mini” side of things.  It tasted cool, creamy, and delish though!

Sarah & Jeff were so sweet, they picked us up some iced coffees and bagels to thank us for helping them out this morning (like we ever would have said NO…we LOVE these 2!)  I ended up having a 1/2 of a plain cinnamon raisin bagel in between my cleaning.

Now I am rushing like mad to get ready and head back out the door to my parents house.  We’re having an 85th Birthday party for Grandma today! 😀  So I’ll be back later with a recap of the rest of the day…which I know is going to include LOTS of yummy eats!  Hopefully I can control myself today…eeek! 😉

How do you handle eating when you’re at picnics/potlucks with LOTS food to choose from all day long?


My attempt at a workout this morning was a bust.  I had the alarm set, and ended up snoozing for almost an hour!  My bed was so warm and cozy, I was just not ready to leave it. 😉  Plus, before going to bed, I will usually have a plan set for what my workout is going to be, and last night I was up in the air with what to do.  Oh well, I must have needed the extra sleep because I was feelin’ a little slloowwww after finally getting up.

I was also feelin’ a little green this morning…

For a Green Monster that is! 😉

Today’s glass looked like this:

-1 frozen banana

-5 frozen strawberries

-1 scoop chocolate whey protein powder

-1/2 cup almond milk

-splash H20

-3-4ish cups spinach

I think there’s something wrong with my blender!  It took me four rounds of the “frozen drinks and shakes” button for this thing to finally come together.  That shouldn’t happen, right?!? GRRR!

Despite my “blender blunders”, this glass was DEElish! 😀  Nice and creamy, perfect consistency, like chocolate strawberries…YUM!

On the side, I also had one of my Apple Cinnamon Raisin Bran muffins.

Smeared with a little butter 🙂

These muffins are tasty!!  I’m glad that I added in the apples and raisins though, because otherwise they might be a little too plain for me.  I may need to grab another one in case hunger strikes mid-morning. 😉

I want to try a new Green Monster combo!  Does anyone have one that they really like??
