First Day = SUCCESS!


Although I’d say the first day was a definitely a success, it certainly doesn’t make it any less tiring. Wow…I forgot just how difficult this transition can be!


Luckily, I still had some energy in me after school to head to the gym. While I was there, I completed a killer cardio combo:

  • 35 minutes on the elliptical (doing the interval course)
  • 10 minutes on the stationary bike (again, doing the interval course – “3 on, 1 off”)
  • 10 minutes on the Stair Climber (doing the “fat burner” course at a level 11)

I blame those last 10 minutes on the Stair Climber for my exhaustion…that was one INTENSE session! Whew! Despite feeling completely wiped on my way home, it was definitely worth it. I can’t wait to feel the soreness tomorrow – it’s been a while! AAAAND, the foot was feeling great, so I’m looking at that as a good sign. 😀

(Althooooough, maybe the lack of pain in my heel has something to do with the fact that my feet were already killing me after standing on them in heels all day long? Oh yeah, and lets not forget the 4 beautiful new blisters from the new shoes today. I don’t know…just sayin’.) 😉


Knowing that I would have a BUNCH of work to tackle this evening, Jay took care of prepping some chicken for dinner. We had some roasted red pepper-marinated chicken in the freezer that we took out before leaving for work. After they were grilled to perfection (hubby is definitely a Grill Master!), I sliced up my piece and placed it on a whole wheat Arnold’s sandwich thin with some lettuce tomato, and a teeny smear of light mayo.



It may look kinda lame, but it was anything BUT! I also had some leftover Roasted Veggie Casserole on the side, but I ate it up too quick for the camera. What can I say, I was hungry gal!

I actually debated on just taking the evening off from blogging, but I just can’t seem to stay away!

Time to get back to the work…


…since I don’t think it’s going anywhere! And you can bet that there will probably be another slice of Pumpkin Spice cake involved this evening, all while watching Wipe Out on TV…this show literally has Jay and I in stitches when we watch it!

Feelin’ The Jitters

I am literally up to my ears in work right now! 😯

It’s always a little extremely hectic the night before the first day of school with students…I swear I get the jitters worse as a teacher than I did as a student. Such conditions definitely called for a quick and easy dinner.


I heated up some leftovers from my Roasted Veggie Casserole. There’s still at least two more servings left…easily. 🙂


I also cooked up a MorningStar Farms veggie burger, crumbled it up, and mixed it with some lettuce, tomato, red onion, and honey mustard…


…and tossed it into a Joseph’s Sandwich Size Whole Wheat Pita Bread. LOVE these things! 



I was really in need of a workout today. Not only because it’s been two full days since I’ve had one, but I also needed it to help relax my mind. (Which has been running at 110% since yesterday!) I was originally planning on hitting up the gym after work, but decided I wanted something a little more relaxing. I headed home and did two of my favorite workout videos from Exercise on Demand: 10lb Slimdown CORE & 10lb. Slimdown YOGA. They both really did the trick – I felt like a brand new person afterwards! 😀

Time to get back to this work…my stomach already has butterflies! GAH! 😯

Roasted Veggie Casserole

Productivity has been the name of the game in this household today! Even though my To-Do List is not completely empty, we were able to tackle quite a few items:

  • Catch up on posts
  • Finish guest post
  • Follow up on emails
  • Grocery shopping
  • Go to Verizon
  • Clean out garage for Garage Sale
  • Organize bills
  • Laundry
  • Finish cupcake menu 😉
  • School stuff

I was able to get some school stuff done, but I’m pretty sure that won’t be taken off my To-Do List until next June…either way, I still got some accomplished!

Cody had a pretty busy day too:

  • Nap
  • Play with cat toys
  • Beg for food
  • Meow constantly until I get the attention I deserve

He’s obviously pretty pooped out from everything on his To-Do List too. 😉


Our fridge has been FULL of veggies just waiting to be cooked, so tonight I threw a bunch of them together for a delicious Roasted Veggie Casserole.


After seeing the idea on Amy’s blog over the weekend, I decided it would work perfectly for me.

Veggies in the Casserole:

  • 1 zucchini
  • 2 yellow squash
  • 1 head cauliflower
  • 1 medium sweet potato


I simply placed all the cut up veggies into the casserole dish, drizzled them with a little bit of olive oil, and sprinkled about a 1/4 cup bread crumbs, some parmesan cheese, Italian seasoning, garlic powder, and some S&P.

I placed the casserole into a preheated 450 degree oven and baked the dish for about 45 minutes. And for my dinner, I mixed my portion with some leftover ground turkey from Taco Night.



It was not only fantastic, BUTI probably have enough leftovers to feed a small army. They’ll come in handy for lunch this week! 🙂

Time to go get myself ready to get back to the grind tomorrow. I guess it looks like summer is officially over…BRING ON FALL!!
