Look what was waiting for me when I got home today! 😀

I just LOVE coming home to packages, and I had totally forgotten that I should even be expecting this special guy.

Lucky me was the winner of Liz’s Cookie Giveaway! Being the winner, I had the choice of three different batches of cookies. Seeing as though one of those cookie choices was my Heath Bar cookies ( 😀 ), it was easily narrowed down to two. And while the two remaining choices both sounded super delicious, I just had to go with…

Soft Pumpkin Chip!

Ok, let’s do the rewind…

Breakfast

A bowl of some oddly frothy oats. Yes, frothy. Not really sure what happened? The only thing I can think of is that I added about a 1/4 scoop of protein powder and cooked ‘em in the microwave today, rather than stovetop. They still tasted alright, but not my favorite batch. The scoop of Maple PB in the middle there certainly did help though. 😉

I also enjoyed some delicious Caramel Macchiato flavored coffee, x2. I can’t let any of this stuff go to waste, so if there’s extra in the pot, and I have time, I almost always finish it up before leaving the house. You guys like the looks of my kitchen table in the morning before I leave for work? 😯

Lunch

Forgot to make one last night, so was in a rush to throw something together this morning. GAH!

Carrot sticks + hommus and a plain flavored Chobani mixed with a diced pear, pumpkin butter, and topped with some granola. For being a quick grab, it was quite tasty!

After work, I was headed to the gym, so I snacked on a Spooky S’mores Clif Z Bar. So so good. 🙂

Today’s workout was 17 minutes (yep, 17…all I had time for!) on the elliptical using the interval course, followed by a BodyPump class. Today’s class was a tough one; my body is quite sore today from doing all that raking yesterday. 😳 Either way, it was still a good class!

Dinner

I was on my own tonight, since hubby is working late, so I went with another quick and easy combo.

I lightly toasted a whole wheat Thomas’ Bagel Thin, and topped it with a MorningStar Farms veggie burger + a slice of reduced-fat provolone.

And on the side, I had a little slice of heaven half of a sweet potato. I simply cooked it in the microwave, mashed it up, and topped it with a little butter, cinnamon, and pumpkin butter. The aroma coming from this thing was unbelievable. I had to stop myself from eating the other half…this was a BIG tater!

Of course, immediately after finishing my dinner, I had to dig into my new goodies!

They are super moist, almost cake like. And the chocolate chips + chopped walnuts complement the flavors perfectly. Normally, I’m not a huge fan of having nuts in my baked goods, but if they’re chopped small enough, I’m game. Plus, they are in something pumpkin, so really anything goes. 😉

So psyched it’s Wednesday…you know what that means?!? Modern Family!! I’m ready for some laughs…any maybe another cookie or two. 😛 Hope ya’ll had an awesome day! We’re more than halfway to Friday!

Daydreaming of Pancakes

I’ve determined today that I just am not good at adjusting to when my workout plans change. 😳

I was originally planning on hitting up the gym after work today, but I ended up going to visit my grandma in her new apartment first. By the time I left grandma’s, it was almost 5:00, and I knew that my gym would be packed.

I can’t stand when the gym is packed and I have to wait for a machine…

So I nixed the gym plans.

Hey, it happens. I at least still made sure to work in a quick, 10 minute cardio workout off of Exercise on Demand, so I could say I did something. Back to the plan tomorrow (whatever that is!) 😉

To be honest, I had other things on my mind this evening, and they had everything to do with tonight’s dinner…

Or shall I say…BREAKFAST! 😀

Jay and I decided yesterday that today was going to be “Pancakes & Sausage for Dinner” night, and I’d been thinking daydreaming about it all day. I decided to use Tina’s Really Good Pancake recipe, which I’ve used in the past and has always been a success. The only change I made was with the flour: rather than 1.5 cups all-purpose flour, I used 1 cup whole wheat + .5 cup all-purpose (I ran out of AP) but the pancakes were still amazing.

I even got a little crazy and added in some mini chocolate chips into half of the batter. Mmmm Mmmm Mmmmm 😛

And what’s that orange “stuff” pouring off of my fluffy cakes? Well, it’s Pumpkin Maple syrup!

I simply mixed 1/8 cup maple syrup + 1.5 tbsp pumpkin puree. The combo was great, but I actually think that I’ll stick with regular syrup on my pancakes next time. I guess I’m just a regular syrup kinda gal. 😉

Along with our pancakes, I cooked up some MorningStar Farms sausage links. My opinion? They were good, but no substitute for the real thing. The flavor was pretty decent, but the texture was far from that of a regular sausage. Jay’s opinion? He could barely stomach one bite… 😯

Where Does The Time Go?

Good Evening! Wow, really, is it evening already???

I have been on the go ever since I got home from work today. Jay and I are preparing for a garage sale this weekend, and we have SO.MUCH.STUFF to sell. 😯 Not only is it our stuff, but we also have a bunch of stuff that was left here from my grandparents (For the new readers: Back in April, Jay and I bought the house that my grandparents lived in, and my grandfather actually built…hence the extra stuff). 🙂

So, needless to say…we have our work cut out for us. UGH…

Dinner

In the midst of all the rummaging around through the casa, I took a quick break for some DINNAHH.

I heated up a Morningstar Farms veggie burger, and paired it with a little lettuce, tomato, and red onion, on a lightly toasted whole wheat Thomas’s Bagel Thin. These bagel thins really are GREAT!!

Oh yes, and we can’t forget about the ketchup and mustard. 😉

I also ended up finishing off the rest of the Roasted Eggplant & Feta Dip while waiting for my veggie burger to cook up. It was definitely an “on-the-go” meal, but it worked for tonight. I’ll be much happier next week when things die down and I actually have a little extra time on my hands to do some cookin’!

Time to veg out and watch a little Modern Family & Cougar Town – I’m so excited they’re back on!!

Feelin’ The Jitters

I am literally up to my ears in work right now! 😯

It’s always a little extremely hectic the night before the first day of school with students…I swear I get the jitters worse as a teacher than I did as a student. Such conditions definitely called for a quick and easy dinner.

I heated up some leftovers from my Roasted Veggie Casserole. There’s still at least two more servings left…easily. 🙂

I also cooked up a MorningStar Farms veggie burger, crumbled it up, and mixed it with some lettuce, tomato, red onion, and honey mustard…

…and tossed it into a Joseph’s Sandwich Size Whole Wheat Pita Bread. LOVE these things!

Workout

I was really in need of a workout today. Not only because it’s been two full days since I’ve had one, but I also needed it to help relax my mind. (Which has been running at 110% since yesterday!) I was originally planning on hitting up the gym after work, but decided I wanted something a little more relaxing. I headed home and did two of my favorite workout videos from Exercise on Demand: 10lb Slimdown CORE & 10lb. Slimdown YOGA. They both really did the trick – I felt like a brand new person afterwards! 😀

Time to get back to this work…my stomach already has butterflies! GAH! 😯

Beware of Coupons

This afternoon while out running errands I decided I needed an iced coffee. Surprised? No, me either. Luckily, I found one of these to use out of our Entertainment Book, so I figured hey, free coffee? Why not?

I ordered a non-fat, sugar-free vanilla iced coffee.

After one sip, I think I probably made a face comparable to this:

Just like drinking pure syrup through a straw…so into the garbage it went

Then I went and negated the “free” aspect of it all and got a new iced coffee…

…and ended up with a face much more like this:

And my afternoon was complete.

Dinner

Tonight we had a softball game, which concluded with a victory cookout, as always. 😉

The grill was nice and full tonight! Can you guess which item was mine???

If you guess the veggie burger, you guessed right! Sometimes, when I know there aren’t going to be too many healthy options, I take the situation into my own hands and bring my own. This way, I still felt like I could enjoy the cookout, without depriving myself. It just takes a little extra planning. 😉

I had my Morningstar Farms veggie burger on a potato bun with a little ketchup & mustard. It was super yum. I also snacked on some pretzels that were there too.

Then, Mom brought out the big guns. It appeared as though somebody spent a little extra time in the kitchen today! She whipped up a batch of brownies, but oh no, these were not just any ordinary brownies. These were Snickers Brownies.

Oh yes. Warm, gooey, fudgy, Snickers-filled brownies. Complete with chunks of caramel, nougat, and peanuts. I had one…then I had another…then somehow, half of another one ended up in my mouth. And if I didn’t cover the pan back up promptly, it’s quite possible the pan would have been demolished. 😯 They were amazing. Thanks, Mom! 😛

I have a FULL “To-Do” list on my hands for tomorrow to try to get ready before leaving on Thursday!!

Wellll, I’m gonna make you wait for it (actually, you could just scroll down to the end of the post to find out, buuuut I like to think that all of my loyal readers would much rather read about my eats today before finding out if they won something) Pshhhhh! Hey, it was worth a shot. 😉

Lunch

I knew my veggie intake was a little low yesterday, so I decided to try to “beef it up” today with a nice big ‘ol salad.

I mixed together some green leaf lettuce, cukes, tomato, carrots, dried cranberries, 1 hard boiled egg (white only) and some fat free crumbled Feta cheese (maybe about 2 tbsp?).

Everything tasted so crisp and fresh, and the addition of the feta really brought the whole salad up a notch. Just a reminder that decadent doesn’t always have to mean “bad for you” my friends! 🙂 The hard boiled egg tasted awesome too; I really need to remember these more often, because I hardly ever think to put them in. ‘Twas a delicious salad!

As a mid-afternoon snack, I enjoyed about half of my Raspberry Avocado Smoothie.

I had such a good time experimenting in the kitchen with this smoothie recipe today! Unfortunately, I think I ended up ruining any desire to stay in the kitchen much longer for dinner. It’s pretty hot and humid in the house again, so I had declared it another “Oven Off Limits” night.

Let the veggie consumption continue! I heated up a Morningstar Farms veggie burger, topped it with a slice of provolone cheese, and added a little lettuce, tomato, & onion to a lightly toasted whole wheat Arnold Sandwich Thin. And of course, you can’t forget the ketchup & mustard. 😉

Question for the Night:

Do you find that your cooking patterns change with the weather/seasons?

I’d say I definitely don’t use my oven as much during the warmer months, but we’re much more likely to grill in the summer than in the winter. I also tend to have a lot more “easy dinners” in the summer months, like tonight’s. 🙂

A Lazy Blogger’s Dinner

May I please present to you, the most exciting part of my day…

AIR CONDITIONING!!! :mrgreen: Jay had finally had it with the heat (and so had I) so he caved and went to buy us one. We already had one in our bedroom to help with sleeping at least, but now the rest of the house is becoming almost bearable. 😉 The thermostat is down to 80 degrees – we’re makin’ progress folks!

Dinner

Tonight is definitely a lazy blogger’s dinner night. I’ve pretty much been grazing all day long, as I’ve been hard at work in the kitchen getting ready for a couple fun gatherings tomorrow :mrgreen: <– that’s my totally psyched face. I was quite tempted to continue grazing, but knew I needed some form of a solid meal in me, rather than snacking my way through the pantry. Luckily, I picked up a box of these gems the other day at the store…

I am a huge fan of the MorningStar Farms veggie patties. Actually, any flavor/variety I’ve tried of their “burgers” has never ceased to amaze me. Usually, I like cooking them on the grill, but lazy = microwave for tonight.

I topped my nuked veggie patty with some delicious Gouda, and paired it with a whole wheat Arnold Sandwich Thin, and some lettuce & tomato.

On the side, I heated up the rest of my grilled yellow squash & zucchini.

I feel much more satisfied now after having a “real meal,” lazy or not. 😉

So do you guys wanna know which dress I bought from today’s Fashion Friday post???

Surprisingly enough, I don’t think anyone picked the one that I did!

I absolutely LOVE the one shoulder look on some dresses, and this was definitely one of them. I just hope it fits (downfall of buying online from a new store).

I must admit though…most of you commented on the dress that I still currently have up on my computer screen and am seriously contemplating buying…

I am quickly falling head over heals for this gladiator number…it’s so freakin’ adorable, isn’t it?!? I just can’t tell if it’d be a little too short on my 5’7″ frame?? I think maybe the only way I’ll be able to justify getting it, is if I’m able to find a coupon code…
