Goodbye Fall…Hello Christmas

Has everyone made their way out of their food comas from yesterday?? 😉

Well, it’s about that time again…

As much as I absolutely adore everything about fall and my fall decorations, it’s time to pack it away. I think Cody’s going to miss all of his window decorations toys. 😉

Growing up, it was always tradition to use the day after Thanksgiving as the day to begin decorating for Christmas; tree up and all! So even though I’ve been out of my parents’ house for two years now, I still keep the tradition going in my own house. 🙂

Before getting started, however, a delicious breakfast was in order.

I figured it was only fitting to incorporate the “fall background” one more time before it’s all packed up. 😉

A plain Chobani mixed with a scoop of homemade pumpkin butter + a scoop of pumpkin cream cheese + 1/2 sliced banana + granola.

Perks & Productivity

Want to know two of my favorite perks about having a day off from work?

Being able to complete a morning workout NOT at 5:30am, and then being able to cook a delicious breakfast while reading magazines. 🙂

I made myself a delicious batch of stove-top Pumpkin Oats this morning. I don’t care what anyone says…I can definitely tell a difference between stove-top and microwave oats. They’re just so much creamier! 😛

In the mix:

  • 1/3 cup oats
  • 1/3 cup vanilla almond milk
  • 1/3 cup water
  • 1/3 cup pumpkin
  • 1/2 mashed banana
  • Cinnamon & pumpkin pie spice
  • Cranberries!
  • Tiny scoop almond butter

I’ve had some cranberries leftover in the fridge ever since I made my Cranberry Apple Bread, so I decided to put them to use. I stirred them into the oats in the last minute of cooking, which got them just soft enough without exploding all over the place. 😉

I also got to sip my coffee today out of a regular mug today…not a travel mug! Ahhh the little things. 😉

Workout

Today’s workout was a GOOD one; a little HIIT did the trick today and left me as a nice sweaty mess:

0-4 mins          Warm-up @ 4.0

20 seconds      Sprint @ 9.0

40 seconds      Recover @ 4.5

(Continue 20/40 second intervals for 20 minutes)

24-29 mins       Run @ 6.5

29-33 mins       Cool down @ 4.0

So far today, I have been a very busy bee and still have lots ahead of me! But for now, it’s time to go break for some lunch. 😛

Question for the Afternoon:

Any ideas for what else I can do with my leftover cranberries??? I probably have about 1-2 cups left…

I’m not a huge fan of the cold as it is, however, with living in the northeast I’ve learned to suck it up and deal with it…but really, a girl needs a little notice here! Cody does too…he’s not a fan. 😉

As soon as I walked inside, I heated up the tea kettle to make some nice warm tea. Nothing sounded better as the cold, wet snow sloshed around inside my flats, which were being worn with no socks mind you…of course. 🙄

I heated up some vanilla almond milk and added that to the tea to up the creaminess factor. It totally hit the spot…that, and the fact that my tootsies were pleasantly warm inside my fuzzy slippers. 🙂

Reeeeewiiiiind……

In usual Monday fashion, I started out my day with a nice sweaty workout! I decided on the Jackie Warner’s Total Body Power Circuit from Exercise on Demand, which was definitely a good choice. I could feel the burrrrrn. 😯

Breakfast was simple but hey, when there’s peanut butter involved, simple is snazzy.

I lightly toasted a light english muffin, topped with PB & banana slices, which was thoroughly enjoyed along with my Caramel Macchiato coffee.

Lunch was a Monday Usual, so I didn’t bother with the photos. You guys know the deal. 😉

Dinner, however, was a delectable leftover feast!

Check THAT baby out! On Saturday when Jay and I went out for dinner, we both ended up ordering a “torpedo” from the menu of the restaurant we went to, Appletini’s. I think both of our jaws dropped to the floor when we saw just how much food we were being presented with. Would you believe that this was only half my sandwich???

My torpedo was marinated grilled chicken, topped with peppers & onions (surprise!) and tons of delicious, melty provolone cheese. I also heated up some leftover peas to go along with my sandwich; partially for the veggie intake, but partially for some color. 😉

I obviously had no problem with this beast tonight…I was starving tonight!

The rest of the evening has not exactly been relaxing, but certainly bringing on lots of excitement!

Putting together a treadmill is no walk in the park, I’ll tell ya! This thing is no joke.

Cody, on the other hand, has been having a blast playing with any packaging pieces he can get his little paws on…

Hopefully, Jay and I can get this monster put together ASAP…not only because I can’t wait to give it a whirl, but also because I have some leftover Apple Crisp calling my name!

I’ll Order the Omelet, Please

Can you believe that I have been up since 6:30 this morning?? 😯

And that’s without an alarm!

I mean, I know we got our extra hour of sleep last night and all, but waking up that early, without an alarm, is practically unheard of for me! So rather than attempting to force myself back to sleep, I rolled out of bed and took advantage of the early morning hours by catching up on some housework and paying some bills. I was quite productive, and all before 8am. 😉

After brewing up some coffee and lounging on the couch with my mug-o-joe and catching up on some magazine reading, the morning got even BETTER when hubby asked if I’d like him to cook breakfast…

Seriously? Who kidnapped my husband and sent you here??

Actually, breakfast is the one thing thing that Jay doesn’t mind cooking…especially omelets. He is one heck of an omelet-maker! I think he must secretly be watching me when I prep in the kitchen, because I was rather impressed with I saw his prep station:

I “ordered” a 1 egg + 2 egg white veggie omelet, complete with a side of whole wheat toast.

The toast was from the loaf that I picked up yesterday at the Farmer’s Market. It’s delish with a little raspberry jam. 😛

My omelet included a mix of green peppers, onions, and tomatoes, along with a little provolone cheese.

One advantage to enjoying omelets at home is that you get to control the amount of cheese! I really do enjoy having cheese in my omelets, but I never order it when I go out. There’s something about the 37 slices worth that they usually seem to put in at restaurants that turns my stomach. BLEH! 😯

Since hubby cooked up a delicious breakfast, I offered to take care of the clean up. Nice idea, right?

Grrrrrr!! My damn porcelain sink! I can’t tell you how many dishes I’ve broken in this thing. I was not a happy camper…

but luckily I had this guy right around the corner that quickly lifted my spirits. 🙂

Isn’t he adorable?? Last night, Jay and I headed over to Sarah & Jeff’s house to meet the new addition to their family. Tram is a Morkie (Yorkie + Maltese) and is the cutest little thing I’ve ever seen. I might steal him…watch out Sarah! 😉

So we didn’t ONLY go over to meet little Tram, but also to celebrate Sarah’s birthday, which included one of my favorites: Funfetti Cake!

I enjoyed every.last.bite. in the healthiest way possible, of course. It’s been a while since I’ve had Funfetti + Rainbow Chip frosting. Yummmm. 😛

Workout

This morning, I got up bright and early to head to the gym, where I spent 45 minutes on the treadmill doing some interval running. I ended up covering just shy of 4.5 miles in 45 minutes, which also included a bit of power walking on a heavy incline. It was a good, sweaty workout.

After showering and getting ready, I went to meet my friend Heather for a Starbucks date! Believe it or not, I haven’t seen Heather since before I went to Vegas in August!

While we sat and chatted, I enjoyed a delicious Pumpkin Spice Latte,

IMG_6014along with a banana (which I forgot to photograph until AFTER I ate it) and a slice of Cranberry Apple Bread that I brought from home. 🙂

I had some grocery shopping to take care of after our Starbucks date, so by the time I got home, I was already starving again. I quickly grabbed a plain Chobani and mixed in about 2 tsp of sugar-free vanilla pudding mix. Julie was absolutely right…what a delicious idea! 🙂

The rest of the day looks like some school work, football, and waiting for trick-or-treaters (hopefully!).
