Fun Demolition Discoveries

This morning while eating my breakfast, I couldn’t help but shake the feeling that someone had their eyes on me… 😉


I put together quite a delish bowl of oats today! Before leaving the house, I put together my base:

  • 1/3 cup oats
  • 1/3 cup skim milk
  • 1/4 cup water
  • 1/2 mashed banana
  • raisins
  • cinnamon & nutmeg


Once I got to school, however, I ended up stumbling across some of the leftovers from our faculty breakfast yesterday morning…SCORE!


So half a piece of some sort of cinnamon apple bread was promptly crumbled on top. Best stumbling EVER. 😉





Lunch was pretty much a repeat of what you guys saw on Monday, so I didn’t bother with any photos. But I did also have one of these…

Honey Graham Clif Z Bars totally rock my socks!! 😀

So last night, some serious kitchen demo was happenin’ up in this place. In the process of tearing things apart, check out the old school coupons we came across!


I don’t know why, but I am always so fascinated by things like this that were from back in the day. Can you imagine clipping a coupon for 10¢ nowadays?? 😯


Well, the coupons ended up being found behind this big ‘ol hunka remaining cabinets…


Which are officially “no longer” and we are now left with no cabinets



…which also means no sink.

Which is why tonight’s dinner looked like this:


Yes, I finally had my first trip to Chipotle! No more Chipotle virgin here. 😉


I chose the Burrito Bowl (all the burrito fix-ins, minus the tortilla) which I ordered with their cilantro-lime rice, black beans, adobo-marinated and grilled chicken, fajita vegetables, lettuce, and salsa.


And as per hubby’s strong recommendations, I got us a side of chips + guacamole + mild salsa.



Now you guys probably already know that I am not a spicy kinda gal. Mild all the way, no extra heat, please! Well I’ll tell ya, I got a little nervous after the first bite into my burrito bowl…

YOWSAHS that chicken was spicy! 😯


I needed something to tame down the heat, so I grabbed some plain Chobani and dolloped it on there, sour cream-style. Problem solved…deliciousness accomplished. 🙂


I’m definitely now a fan of Chipotle, and lucky for me, I have a little less than half of this bowl left for lunch tomorrow! Saweeeeet. 😛

Darn Those Cat Cookies…

What a beautiful day it was here in Upstate, wasn’t it?? It was certainly a far cry from what the beginning of the week looked like! 😯

Mother Nature must have known that it’s Friday. 😉

Not only Friday, but Coffee Friday of course!


I just love treating myself to “special” coffee on Fridays. It makes the day seem that much brighter. 🙂

Today’s breakfast actually came from DD’s too; I was kind of rushing this morning, and anything we had in the house that could have been “grab-n-go” really just didn’t sound appealing. So I ended up ordering a Veggie Egg White Flatbread.


It was pretty good, but didn’t totally hit the spot. I really don’t know what my taste buds were craving this morning?

Except, that is, for these…


After my workout this morning, I seriously could not stop snacking on these!

The workout, by the way, was a pretty fun one which consisted of a little mix of everything:

Nothing too intense, but I definitely enjoyed the variety!

Maybe that’s what sparked my intense craving for these darn cat cookies??

“Get in muhh BELLY!” 😉


Lunch today was pretty typical, but totally top notch:

Pumpkin Yogurt – a plain Chobani yogurt, mixed with 1/3 cup canned pumpkin, 1/2 a sliced banana, a spoonful of pumpkin butter, and 2-3 tbsp granola.


Some veggies + hommus (there was a lot more veggies in that baggie…I dug in early)


Later in the afternoon, I snacked on a Gala apple (which was a little mealy…bummer)


And a honey graham Clif Z Bar. It’s been a while since I’ve had one…they’re just so good!


So unfortunately, my friends, I do not have a Fashion Friday post for you all today. 😳

I know, I know!!

The week ended up totally getting away from me, and before I knew it, it was Friday. But feel free to go back and check out some of my older Fashion Friday posts!

Cookies From The Mailman

Look what was waiting for me when I got home today! 😀


I just LOVE coming home to packages, and I had totally forgotten that I should even be expecting this special guy.

Lucky me was the winner of Liz’s Cookie Giveaway! Being the winner, I had the choice of three different batches of cookies. Seeing as though one of those cookie choices was my Heath Bar cookies ( 😀 ), it was easily narrowed down to two. And while the two remaining choices both sounded super delicious, I just had to go with…


Soft Pumpkin Chip!

C’mon, you’re not surprised, are you?? 😉 Thanks so much, Liz! (*By the way, if you don’t already follow Liz, you should definitely check out her blog. She has some AWESOME looking recipes…Mac & Cheese or French Dip Sandwiches sound good anyone??)

Ok, let’s do the rewind…



A bowl of some oddly frothy oats. Yes, frothy. Not really sure what happened? The only thing I can think of is that I added about a 1/4 scoop of protein powder and cooked ‘em in the microwave today, rather than stovetop. They still tasted alright, but not my favorite batch. The scoop of Maple PB in the middle there certainly did help though. 😉


I also enjoyed some delicious Caramel Macchiato flavored coffee, x2. I can’t let any of this stuff go to waste, so if there’s extra in the pot, and I have time, I almost always finish it up before leaving the house. You guys like the looks of my kitchen table in the morning before I leave for work? 😯



Forgot to make one last night, so was in a rush to throw something together this morning. GAH!


Carrot sticks + hommus and a plain flavored Chobani mixed with a diced pear, pumpkin butter, and topped with some granola. For being a quick grab, it was quite tasty! 


After work, I was headed to the gym, so I snacked on a Spooky S’mores Clif Z Bar. So so good. 🙂


Today’s workout was 17 minutes (yep, 17…all I had time for!) on the elliptical using the interval course, followed by a BodyPump class. Today’s class was a tough one; my body is quite sore today from doing all that raking yesterday. 😳 Either way, it was still a good class!


I was on my own tonight, since hubby is working late, so I went with another quick and easy combo.

I lightly toasted a whole wheat Thomas’ Bagel Thin, and topped it with a MorningStar Farms veggie burger + a slice of reduced-fat provolone.



And on the side, I had a little slice of heaven half of a sweet potato. I simply cooked it in the microwave, mashed it up, and topped it with a little butter, cinnamon, and pumpkin butter. The aroma coming from this thing was unbelievable. I had to stop myself from eating the other half…this was a BIG tater!



Of course, immediately after finishing my dinner, I had to dig into my new goodies!


These babies are DELICOUS!


They are super moist, almost cake like. And the chocolate chips + chopped walnuts complement the flavors perfectly. Normally, I’m not a huge fan of having nuts in my baked goods, but if they’re chopped small enough, I’m game. Plus, they are in something pumpkin, so really anything goes. 😉

So psyched it’s Wednesday…you know what that means?!? Modern Family!! I’m ready for some laughs…any maybe another cookie or two. 😛 Hope ya’ll had an awesome day! We’re more than halfway to Friday!

Dinner at Lanie’s Cafe

It’s always nice to have something to look forward to after a long day of work…especially when it’s on a Monday!

Knowing that I had a nice dinner out planned for this evening definitely seemed to make my Monday go a whole heck of a lot smoother. I think I just may have to plan something like this every Monday. 😉

Before dinner, however, comes lunch…and today’s was simple but super yummy!

I started with a delicious fruit + cottage cheese bowl. Whatcha see there is about 3/4 cup of 1% cottage cheese, a delicious diced pear, and a hefty tablespoon of pumpkin butter. Note to Self: I’m really regretting not buying more of this at Trader Joes this weekend. It’s diminishing quickly. Crap. 😳


Lunch also included one of my new Spooky S’mores Clif Z Bars. It was just as good as I had hoped, but I actually think Honey Graham is still tops on my list. 😯


I also included some fresh carrots + grape tomatoes + hommus to round out today’s lunch. Like I said, simple yet satisfying!



Tonight’s special dinner plans brought us to one of my favorite restaurants, Lanie’s Cafe. Jay’s parents had a gift certificate and kindly asked us to join them. 🙂

So I’d be lying if I said I wasn’t distracted all day long trying to decide what I was going to get for dinner tonight. I honestly couldn’t stop thinking about the amazing meal of salad bar + veggie quesadillas from the last time Jay and I visited:

Absolutely delicious right there. So delicious, in fact that I was pretty positive that tonight was going to be a repeat order; however, last minute I totally changed my mind. I don’t know what happened?!?

I started off with a trip to the salad bar. LOVE their salad bar! They have some of the best homemade balsamic vinaigrette. Yummm. 😛


Then for my dinner, I ordered the Shrimp Ryan: Fresh jumbo shrimp sautéed with artichoke hearts, sundried tomatoes and baby spinach, served in homemade scampi sauce with diced roasted red peppers over pasta.


It was good, but nothing too exciting. I ate all except for one of the shrimp, and most of the veggies. I left most of the pasta behind…looking at my “finished” plate was quite amusing since it appeared as if I hadn’t even made a dent! 😯


After dinner, Jay and I made a quick stop at The Fresh Market to pick up some coffee since we were completely out this morning! We had planned on just picking up some Breakfast Blend…but that was before we tried one of their samples they were offering…and then we ended up buying this:


I know, I know! Christmas Blend?!? Seriously Courtney??? I honestly debated the whole purchase for all of about 15 seconds, solely based on the fact that it said Christmas Blend (it’s still Pumpkin Season folks!). However, I absolutely fell in love with the sample I tried. I was hooked.


And then I saw it packaged with some Caramel Macchiato…and there was no question. I’m psyched! Now I just need to figure out which one to brew for tomorrow morning. 😉

Time to go relax on the couch! Hope everyone had a Magnificent Monday!!

Question for the Evening:

When going out to eat, do you ever scope out menus before going to the restaurant?

Lots of Yummm!

Productive Saturday mornings really make me smile. 😀 But first, before I get to this morning, let’s back track a little bit to last night. A have evening + morning of yummy eats!

Being the first Friday after my first full week of teaching, I guess you could say that I was more than exhausted. The thought of doing anything besides chillin’ on my couch was definitely out of the question. To be honest, I really wasn’t in the mood to cook anything for dinner either, but knowing that we’ll probably be going out to dinner tonight, I figured it would be in our best interest to eat in.

So what do you make on a Friday night when you want dinner done in less than 20 minutes?



Instead of fighting with the rolling out of a pizza dough, we took the easy route with some Boboli Whole Wheat thin crust mini pizzas. And because we can never decide which kinds we want, we make enough for a small army. 🙂

I enjoyed a slice of each for dinner. Usually when we make pizza, we’ll usually have some side salads to go with them, but we were unfortunately fresh out of lettuce. Oh well…too much effort anyways. 😉




It’s tough to pick a favorite – they were ALL delicious!


Jay had to be up early for work, so I decided to follow suit and make my way to the gym for an early workout. Before leaving, I snacked on a honey graham Clif Z Bar. Side note: I really want to try the “Spooky S’Mores” flavor, but I can’t seem to find it anywhere?!?!


At the gym, I completed 45 minutes on the elliptical, covering 6.5 miles, followed by 10 minutes on the Stair Master. I really despise that Stair Master…yet, I keep coming back to it. 😉 Nonetheless, it was a GREAT workout.

After the gym, I made a quick stop down to the Farmers Market. It was an absolutely beautiful morning for it!


While sipping on a delicious Pumpkin Pie flavored coffee from my fave Flavour Cafe,


I browsed the market, picking up some carrots, zucchini, basil, tomatoes, apple cider, Plain Jane Creamy PB, and some fresh bread…


…which I immediately broke into for breakfast as soon as I got home. Spread with some White Chocolate Wonderful PB…amaaaaaazing. 😀

I also enjoyed a honey flavored Chobani, topped with a fresh diced pear, a sprinkling of cinnamon & nutmeg, and the last of my Bear Naked Fit granola.



The addition of cinnamon & nutmeg really makes such a difference. If you haven’t tried it, I’d definitely recommend it.




Time to go take advantage of this beautiful Saturday! Hope you’re all having a great morning. 🙂

Can I get a WOOT WOOT for Friday?!?! I don’t know about you, but I’m doin’ my Happy Dance. 😉


Unfortunately, a lack of preparation last night, meant for a pretty hectic morning. I hate when I do that to myself. 🙄 Luckily, the day turned out to be much smoother than its start.

Here’s some highlights from today’s eats:

Startin’ things off with a little Cookie Friday celebration, a la Tina style. Hey, there’s banana and oats in there…don’t judge. 😉


The celebrations continued with a little Coffee Friday action on my way into work. Pumpkin Spice baby…and alllll was right in the world.


After seeing drooling over Julie’s cottage cheese + pumpkin combo a couple days ago, I finally realized…“DUH, you have all of that in your fridge!”


I promise, the cottage cheese was down there!


My combo went a little somethin’ like this:

  • 3/4 cup 1% cottage cheese
  • 1/2 cup pumpkin
  • 2 spoonfuls unsweetened applesauce
  • raisins
  • cinnamon
  • pumpkin pie spice


Then, as I was putting stuff back in the fridge, I saw my lonely Cinnamon Date Manna Bread sitting there…I certainly couldn’t neglect that! What a combo!


More goods…

I’m really not sure what the rest of the night includes for me and the hubby…but I do know that I’m about to go lay down for a NAP. First full week of teaching = EXHAUSTION. 😯

Hot & Steamy…Oats

Happy FRIDAY to ya! I must begin with some good news: I can happily report that last night’s bug bite did not turn out to be as bad as anticipated! Barely noticeable. It must have been the “X’s.” 😉

(Yes, this is post-workout, naked-faced Courtney – I will not subject you to many more of these pictures, promise!) 😉

Speaking of that workout — boy, I’ll tell ya, my hips are just not happy with me this week. They are sore, tight, and pretty uncomfortable. I’m wondering if maybe it was a combination of my longer run on Monday & the new workout Tuesday? Ahh, I don’t know; either way, I knew once I started moving today, that running probably wasn’t going to be the smartest choice. I need to give the joints a little more time to rest. So rather than running, I did my Incline Interval Workout, which felt GREAT! I love getting all the different resistances with the various inclines –it’s workin’ lots ‘o muscles. 🙂


Oddly enough, I was craving oatmeal this morning. Hot, creamy, steamy off the stove oatmeal. Originally, I was going to cook up some of these steel cut oats that I picked up the other day, but I got scared. 😦 I’ve never tried them and I really didn’t want this morning’s oats to be a flop. Does anyone else out there have any tips/advice on the steel cut oats? Are they like regular oats? Maybe next time!

Instead, I stuck with my favorite, simple whipped bananer oats:

1/3 cup oats

1/3 cup vanilla almond milk

1/3 cup water

1/2 smashed banana

1/2 tsp vanilla


golden raisins

Then it was time to get fun with some TOPPINGS! 😀

First I started out with 1/2 of a Clif Z Bar

Then a little sprinkle of granola…

And of course, a scoop of my truly beloved: Blizzard Butter

And ended up with this absolutely fantastic bowl!

Yes, they were hot, steamy & creamy, and yes, I was sweating through pretty much my entire breakfast. But hey, I didn’t care. They were that good today. And if I had more in front of me, I’d sweat through them again. 🙂

I have some more errands ahead of me today, some of which include picking up some items for my friend Joelle’s bridal shower tomorrow! I’m so excited. :mrgreen:

Question for the Morning:

What foods will you still enjoy despite extreme weather circumstances?

Obviously, I will still endure the heat of a hot bowl of oatmeal in 90+ degree weather. But I’ll also savor every last bite of ice cream in the dead of winter. Yup, I’m addicted, I ain’t gonna lie! 😉
